Not quite sure how it's racist, but gammon typically refers to older, ignorant and bigoted men who form all of their opinions from the right wing media, such as the Daily Mail.

I believe it describes how their faces turn pink when they get worked up about "them bloody immigrants taking all our jobs that we can't be arsed to do..."
