lol, that did make me laugh out loud! is it bad that I have had more of a laugh on here tonight than all that time spent with work people today! I just cant relate to people who dont take drugs! sheeesh WTF

I have acquired a smoked ham haugh - its a strange looking bit of pig. Pondering what to do with it, returning it to the pig is not an option.

Have leftover mash, going to make tattie scones for brunch I think. With an egg and tomatoes mmmm
 
A massive pea and ham soup?

dried peas?

Simmer the whole hock in a big stock pot for HOURS, remove the hock and then cook the dried peas in the salty smokey piggy stock.


doesn't even need a lot in the way of seasoning, just a little bit black pepper, lovely thick grreeen gloopy winter soup :)

Yes, it appears it is destined for soup. Audit of the larder shows I have split yellow peas, dried green peas, lentils and scotch broth mix. It's steeping in cold water now, google tells me i then change water and boil up, then chuck that water to re-boil again with some peppercorns and a bay leaf. Add some veg n' I think the yellow peas. Take haugh out and remove meat to return some to soup.

It's bloody huge - just about fits into my biggest pan!
 
yeah, I dunno about all the throwing away of the boiling liquor, you might want to skim it, but really them first boilings have the most hammiest smokiest saltiest goodness in......when you cool it it turns into a really solid jelly.....

shit I wish I had a ham hock today, fancy pea and ham soup now, been ages since I made one.
 
It smells smoky - hopefully won't be too salty, but shall take your advice over googles and if it's too salty to eat - will post it to you lol!
 
just taste the stock after the first long boiling, if it's too salty either water it down, or chuck it and boil again, but I don't like the idea of a secondary boiling, you're boiling something you've already boiled most the best stuff out, not just the salty flavour but the unctiousness too.....

EDIT>>>>>but you do want it to taste salty cos the dried peas take a lot of salt/seasoning, so they'l temper a lot of the saltiness.....

arrrrgggghhhhh, I might go and look for a ham hock, it's all I want to eat now today, pea and ham soup, damn you kate. ;)

December chills are made for pea n' ham soup =D

I have a really decent butcher in the town nearby, all the produce is locally farmed and slaughtered. (apologies to all the veggies out there) He has interesting cuts, things I'd never see in a supermarket here, and is keen to "push" haha, things he thinks you'd like to try. Got offered the smoked haugh and ox tails yesterday. Will try the ox tail another time, found some pretty nice recipes for it that would be perfect for the slow cooker.

Pity I can't get the fish you do, and I live by the bleedin' sea too :\

Mmmm winter cooking.... Now don't get me started on my homegrown kale, it's been my big veg success of the year and is still going strong %)

wow we manage to keep our kale and chard going all through the winter down here, I'm amazed you manage it right up there though....

I'm amazed you not got great acceess to fish and shellfish up there too, I always imagine Scotland as having some of the best.

The kales the only winter brassica that's giving me a good yeild so far, had some nice cabbage but the others are on their last legs - not a brussel in sight. So much for winter sprouting purple broccoli too :\ Had high hopes for it.

I'm on the Clyde, its suffered badly from over fishing and we have very few boats bringing stock in for local use. If anything it'll be trawled further afield and exported I'm sure :X We have a "no-take zone" nearby, an attempt to repopulate scallop beds especially and to protect rare species marl beds. I would like to see more of the Clyde designated as a marine conservation area - there's only a wee bit around Arran currently. http://www.arrancoast.com/

There's a mussel and oyster farm nearby but it exports. 1 salmon farm no one wants, lice-breeding ground - again an exporter.

You're getting me all worked up now :D




Edit: you've just inspired me to make kale bubble n' squeak type cakes with some ham from the haugh in them lol

I've been busy cooking all day for lunches and teas for the week. Sweetcron & chilli soup, chicken and veg thai style curry (it went wrong somewhere, spices taste harsh, chicken overcooked and the brocolli tastes well out of places, smells and is soggy), chilli con carne which we'll eat tonight.

I've heard of and even had a bite of a deep fried pizza - it wasn't at all nice (why isn't there a smilie for the boak) but I'd never heard of a battered and deep fried pizza. That takes the biscuit :D I'm very conservative with my chippy-choice, stick to fish.



6 hours later for a bowl of pea & ham soup - it was amazing <3 rib-sticking stuff.

Your thai style curry doesn't sound good, can you not mix it into the rice or even cous cous for a spicy risotto thing?
 
Aye they batter them round here before frying. Haven;t had a chippy in ages but usually go for a spicy haggis or jumbo sausage supper.Regardless what I do with the thai curry Kate it's still gonna be a bit bogging. I'm really put off eating it now but I spent the best part of a tenner on ingredients for it so it's gonna have to be munched.
 
That's ahorrible feeling Spade, i know it weell, you've spent a fiortune on good ingredients AND got HIGH EXPECTATIONS for your meal, and it just turns out wrong, a real sinking feeling, and not helped when your friends or faily are eating it and telling you its nice, you're just thinking "No, It Isn't, it's SHIT"...

Might just be me, hate it though ;)

It aint just you MM. I've been there a few times and it's wank isn't when it happens.

Kate, you've given me a semi-chubber thinking of a bowl of nice, thick pea and ham soup. With hunks of fresh tiger bread and salted butter.
