Meatball Casserole.
Serves 4.
500g of mince.
bunch of parsley.
2 large onions, chopped.
2 garlic cloves, crushed.
1lb carrots, chopped in chunks.
1lb of potatoes, chopped into chunks.
1tbsp of paprika.
tin of tomatos.
1. Mix mince with parsley, salt and pepper and shape into 12 balls.
2. Heat oil in pan and fry for 5 mins till meat is brown.
3. Add onion, garlic, carrots, potatoes and half pint of water / stock.
4. Simmer for 15 mins.
5. Add paprika, tomatoes and parsley.
6. Bring to boil, turn down heat and cook till veg is tender.
