Had a bit of a hectic week so my meals have been pretty rushed -

did pork belly for dinner tonight, in the oven for 3.5hrs. had a crushed fennel seed coating on top, oven roasted potatoes with it.

It does all look damn good, I do love me a bit of calamari as well.

Arghhh busted :D - I've been tempted to make a Ceveiche with some and prawns but may have to put that off for a bit.

Had to google what that was as my culinary lingo is about as big as an amuse-bouche :| but never been a fan of raw fish. Would do some pretty nasty things to get a plate of prawns in garlic butter with bread though.
 
My gf lived on ceviche for a while when we were in Ecuador, despite Lonely Planet telling people to avoid it as it will kill them. Lonely Planet are idiots.

Tbh if I wasn't 100% certain on the freshness I would probably give it a quick boil first - couple of minutes until 'just' cooked, chop it up and mix with the other stuff and leave for a few hours. (I know cooking it first sort of defeats the point of the dish but) Garlic, prawns, olive oil and crusty bread - could eat it every day :D.

Yeah some of the travel tips / advice are a bit OTT. I know its better safe than sorry but to literally scare people into not eating the local food etc is a bit much.
 
Mrs SHm is asking for mayoless coleslaw recipe...possible?

lol here you go

4 cups shredded white cabbage
1/2 cup malt vinegar
1/2 cup sugar
1/4 cup water
1/4 tsp celery salt
Salt & pepper

You just chuck it in a bowl and leave in the fridge overnight, mixing occasionally. Its nice with lasagne or cold gammon.

Sorry, I haven't been online all week so just catching up - My coleslaw isn't really a coleslaw but its just easier to explain that way :D

I very finely slice up red and white cabbage, onions, peppers, chili and lemon juice (salt n pepper) (vinegar would make it go soggy too quickly if your using it the next day etc). Thats the basic mix but I often add very finely sliced (de seeded) tomato (and sometimes fresh garlic/ginger depending on the dish) - I also often add very finely sliced courgette (use a vegetable peeler to save the hassle).

It's great as is but I often scrunch it all together (pretty roughly) scrunch it a few times and it softens up and often feels like its been cooked.

2 more mackerel, filleted floured seasoned and fried, with (ready-made) humous, lettuce from allotment, brown bread, and for some reason i tipped a packet of Walkers Ready Salted on top....

lovely, crispy fried mackerel skin is great, and made a decent salad dressing.

Thats yesterday mornings mackerel all finished, rainy and windy now, but soon as the sea clears again will go out and get some more.....will go with a mate next time if poss rather than son, so can spend a bit longer there....want to catch enough for another mate to get his hot smoker going...smoked mackerel %)

Fish jealousy :D - love your previous pictures, had me instantly thinking how to cook them.
 
^That looks really tasty and I could eat the lot :D. We had the same as last night as had loads left over - no cooking :).

Just looked at the pictures you posted from last night - I honestly can't believe how you find the time and energy to make all that! Especially when it looks sooo delicious :)

The curry is a bit of a feast but were both love them so it's a labor of love :D. The beauty with meals like that is you can eat whats left (if any) the following day - so I get a night off from cooking. Tonight we had shop bought cooked chicken - I need to go shopping so it was served with what I had left, diced carrot and onions. Not the most attractive or tasty meal I've had but did the job.
 
Lunch.

Pakchoi steamed with with julienned ginger and sliced garilc and rocksalt, with sesame oil and soy sauce.

Steamed jasmine rice.

Undyed smoked haddock cooked by pouring boiling water over it and leaving it to cool.

Topped with sliced fresh mint and ripped up coriander leaves. Plus a liberal squeeze of lime juice.

Served with blistering hot sugary mint tea.
 
^looks really tasty and healthy :) - I don't know what to have tonight. I think I'll make Thai curry - haven't had one if a few days.

Had courgette flowers filled with anchovies and mozzarella and then fried for appetizer, it's one of my favourite dishes.

Then for seconds I made a pizza from scratch, gorgonzola, walnuts and garlic, was awesome
