The cheese sauce has gone weird, definitely going to move to making proper cheese sauce after this. I'm hoping more time in the oven takes care of some of the excess water in it and it cooks up properly, but you can still taste the flour in it at the moment and it's practically water in thickness : (
 
I've never understood why anyone would buy a cheese sauce. Just butter flour and milk and it's much nicer/ healthier homemade.
 
Got impatient and pulled it out, the sauce is still pretty runny and you can taste the flour in it, definitely changing recipes next time. Veg is good at least.

You really need to cook the butter down into the flour until its smooth, oily and slightly bubbling, then whisk in your milk, slowly bit by bit until it thickens. Then simmer it gently for 5 odd mins to cook the flour flavour out. Season well ( I use white pepper), add a bit of mustard powder and loads of grated cheese when its off the heat. Strong cheddar and parmasan are my favourites.

Then its good to go with lightly cooked n' well drained, cauli, broccoli, pasta or whatever.

You can't rush a decent cheese sauce. If you want to go quick buy a jar or packet, but it won't taste as nice :)



I have a cheek posting in here as I've not cooked anything today. No appetite, chest infection.. The poor mans eating sandwhiches, hotcross buns and wotsits by the multipack! :D
 
Yeah, the recipe I was following just involved dumping everything into the pan and heating slowly, I think it's both not that good a recipe and I did it wrong by not cooking long enough. Lessons for next time though, at least I had plenty of food, and in particular veg, in between my stim sessions.

I do really need to get a whisk, spoons and forks really don't work as well as you want for making any sort of smooth sauce.
 
A silicone whisk is easy n' fab for smooth sauces. A wooden spoon is also good but more work is involved! Treat yourself. :D
 
I have not cooked anything special in a while. I may have to change that. I have a hankering for duck confit. Mmmmm. I need a bacon and egg roll first though...and a coffee

I'm sure I've seen a post / pic of duck confit from the CATINTHEHAT. I adore his and Bear's pics. You're are pretty excellent too - so as someone who enjoys to cook, please do something inspirational please!

I've never Confited (is that a word) anything, so a recipe and method would be good. I like to spatchcock a whole duck. Makes a mess of my oven but it's very tasty.

Bacon and egg rolls are magic for hangovers of all sorts. I bet you don't get the joys of the Scottish morning roll in Australia ;)

Do you have Marks & Spencers? Their foodhalls are my go to shopping when I don't feel like cooking / am ill. The stuff is good quality but pricey though.

Great Ayrshire (Scottish - pigs and curing not far from us) bacon too. I like how they source locally here %)

No Marks and Spencers here. If i cant be bothered cooking i just eat out. Plenty of good places to choose from. I have been cooking but just my standards...thai curries, spag bol etc. Nothing too exciting. I think today i want something yummy. I will think about it while i wake up.
