I have to admit never ate steak tartare - only becase I stopped eating beef years ago so ignored anything made from beef. I was in Spain a few months ago and sort of fucked up my order and was served the wafer thin slices of beef topped with all sorts of stuff. I had my reservations about the beefy aspect of the dish but after a mouthful I nommed the full plate :D.
I dont have the confidence to make this at home or would do it again - pretty much the same as raw fish !
