About to eat some beets and corn cut off the cob, and whatever else I decide to make if these don't satiate my appetite. :P

Gatorade powder mixed with plain mineral water... yum. Also nibbled on some mini potatoes that I am roasting for the household, roast veggies are done enough for me to eat :)
 
Fried squash with a couple different types of breading--Trying to figure out the best. So far the tastiest and best way to keep the breadcrumbs on the squash is ketchup, as strange as that is!
 
^^this mixture works well too

1 egg
2 tbsp. milk
1 c. dry bread crumbs or panko
1/2 c. grated cheese (Romano or Parmesan)
1/4 c. parsley flakes
1 clove garlic, minced
 
^ Heh, thanks PI, but I don't use dairy, so there goes the milk and cheese--Though I didn't know you could use a whole egg, I thought it had to be just the white, which was why I didn't want to waste an organic egg when I'd have to throw out the yolk. Now I know though, and may try your mixture sans milk and cheese. :)
 
I use the whole egg and sometimes not the milk but def the cheese. I am a dairy whore.

If you can use mayo, that works to stick the crumbs. I haven't tried it with veggies but it works with chicken.

Last had some soup a neighbor made. Had all sorts of vegetables, black beans, and some other stuff. I added in a package of NoOodles.
 
Grilled breakfast pizza: dough (preferably fresh), scrambled eggs, bacon, spicy breakfast sausage, red/green bell peppers and sharp cheddar
...prepare all ingredients, preheat grill to ~400F, brush oil on one side of dough, put that side downon grill..cook for 4 minutes, brush top with olive oil, flip, grate cheddar over dough, layer bacon, then, eggs, than sausage and peppers, grate a little more cheese over top..grill for 4-6 minutes (may need to throw under broil in oven to mellt a little more)

...this is the dankest thing I have ever made
 
^ That sounds like wayyyy too much work in the morning, but then again I don't grill. :P

Currently enjoying some steel cut oats with raisins, ground flax seed, annnnd SunButter®. :D
 
Yeah its more of a dinner thing I guess, when you have the munchies really bad it can be really fun to make complicated shit though, this is always worth it in the end
 
Eating last nights dinner leftovers - thai panang curry with brown rice and lots of vegetables and tofu. Sooooo yummyyyyy.

ps yummy re quinoa! We cook it in a rice cooker, it doesnt stick. You just need to be careful not to let it cook too long to prevent it sticking and make sure you put the right amount of water in. Also maybe your stove was up too high?
