A few of these have already been mentioned but this is my artist list for older style dubstep, and I listen to a crazy amount of dub:

Burial - Basically one of the foundation artists for dubstep, he makes brilliant tracks and his album "Untrue" is amazingly reviewed all over the net. This remix of "Where is home" is one of my all time favourite tracks: http://www.youtube.com/watch?v=iIqptGzkt_s

Kode9 - Very chilled out early style dub, his 2006 album "Memories of the future" is the one to check out. (http://www.youtube.com/watch?v=PENB0f5bcpM)

Kryptic Minds - They first popped up with a huge remix of Lung's Afterlife (http://www.youtube.com/watch?v=DGzeicLc5u8). Follow up album "Can't Sleep" is also really worth a listen.

Adventure Club - I really dig these guys, they aren't huge anywhere yet but they have released some really nice tracks (and some horrible ones as is the way for new artists). http://www.youtube.com/watch?v=ItlJjXpHPKA

Skream - Everyone knows this guy already but if not then make sure to check out his self titled 2006 album "Skream!".

There's heaps more but those are my go to artists at the moment for this style.
