I think that your calories are way to low for a guy who is 260 pounds. You are barely getting 1000 calories a day. You should be getting at least 2000 clean calories a day, and probably a bit more. The idea is to eat close to your maintainence calories (the amount of calories that your body needs to not change weight up or down, just to maintain its weight) and let training and cardio take care of the fat loss. Also, with that diet you are probably getting less than 70 grams of protein a day, which is way to low. It is also better to eat smaller meals throughout the day then a few big ones. I will give you an idea of what I would recommend to someone your size
meal 1 1/2 cup dry oatmeal with a few berries or banana mixed in, 50 grams of whey protein
meal 2 can of tuna mixed with 2 Tbs olive oil or flax seed oil and a salad
meal 3 6 oz grilled skinless chicken breast, 1,2 cup cooked whole wheat pasta, 50 grams whey protein
meal 4 8 oz cottage cheese mixed with some nuts and a bit of fruit, 15 grams of fiber from metamucil or a cheaper, but just as good, store brand
meal 5 grilled 6 oz cooked hamburger, 1 whole wheat bun, 1 slice cheese, and some lettuce or some other vegetable toppings that you like
meal 6 50 grams whey protein and 5-15 grams of fiber
This is just a simple idea of what to eat but you can obviously adjust it to things that you like better than others.
You also MUST lift while you are trying to lose weight. Cardio will help for a bit, but to really get down to a lower weight and maintain it, you have to lift and build some muscle. With each pound of muscle you will burn an extra 25 calories a day, so that means that you can eat a bit more and not gain any weight. Also, try working up to at least a gallon of water everyday, and more if you can. I know everyone goes crazy when I say a gallon, but it will make everything in your body run smoother. You will piss a lot for the first few days, but after a while you will get used to it and only piss a bit more than normal. I just get one of those liter water bottles and reuse it and try to get at least four, and usually 6 liters a day. I am sure others can add more.
