I like the Banjo theme from the Silent Hill games/movie.

I also think Vagrant Story had a beautiful theme.

Yeah, MGS kind of wins hand down for me. The main theme of MGS2...good stuff.

Super Smash Bros. Brawl also has a lot of remixes for various Nintendo tracks, which are remarkably well-done. I'm really enjoying the music quite a bit in it.
