Backyard Vegetable Gardening & Livestock Raising & Sustainable Living

I'm smoking my own pastrami this weekend.

I have been doing ribs, pork butt and sausage almost every weekend for the past 2 months. I tossed some zucchini in there a few weeks ago, that was out of this world.

smoked pastrami? i don't know much about meat but that sounds terrible. isn't it...super brined and weird or something? i know there is like 6lbs of pastrami on the whole cow. i don't know what i'm talking about.

It's corned beef brisket but you desalinate it for 8 hours first. Apply coarsely ground pepper, coriander and various other spices then let sit in the fridge for 1 day - 1 week. Smoke until internal temp reads 190, let rest overnight and then steam to reheat for the best sandwich meat on earth!

This is after smoking. The rub can be brushed away before serving for less heat but i like mine really peppery.

Currently steaming it and will make some reuben sandwiches for lunch

oh man! That looks killer... Do want... When ever i`ve bought it i just saute it for a bit and add cheese, but a reuben sounds good now...

Pulled 2 beds of onions today and replanted with some stuff for fall. ( carrots, kale, kholrabi, and bok choi.) Also got the rest of the broccoli, mowed the plants, rototilled and got some peas in for a fall harvest.

well i smoked boneless chicken thighs and ribs so far... Most excellent.

Who here is having issues with lack of rain? I have 2 gardens one here at my house that isn`t as much of a problem, because i can water it as needed. The other garden i can`t water. I`m having all kinds of issues and it sucks.

Ya, the rain here has been all at once or none at all. The raised beds aren't deep enough to stand more than 2 days of 95+ degree heat. Plus, temps that high, with lows around 85 inhibit pollination for things like tomatos. So, I've ended up with a lot of bloom-end rot on my eggplants and toms, and not enough time to dedicate to mulching, watering, and culling defective fruit.

SAD GARDNER

a lot of times blossom end rot is due to low calcium in the soil, or so i've been told. i had a lot of it last year, so this year i used i tip i found on the googles and busted up a calcium supplement tab at the root of all the tomatoes and peppers i planted this year.

there are a few garden forums i go to. I agree with the calcium uptake is the big problem for blossom end rot. My soil has abundant calcium and i still got some. The tomato guys explained it has to be both available and the plants need water enough to bring it into the plant. That`s my problem this year... I haven`t lost a lot, but some.
I had BLT`s tonight with Paul Robeson tomatoes. Will grow them next year no doubt.
*We finally got some much needed rain.

i have started picking some eggplant, everyone says the white ones taste less bitter than the purple ones i grew last year. grilling them (a little salt and olive oil on them first) has been a huge hit. i still don't like them. oh well, they are a cool and easy plant to grow and unlike the cucumbers i grew last year they are in high demand, so they don't go to waste.

tomatoes are starting to ripen.

curiously enough half of my garden died this year and was taken over by cherry tomato seedlings that must have been from last year's crop, and they are starting to fruit like crazy, so soon i will have them coming out of my ears too.

Picture of my balcony garden from inside my window. Those were supposed to be grape tomatoes but i get the feeling they sold me the wrong plant, they are HUGE and not even ripening yet.

michael, i`m curious why half of your garden died. Did you do anything out of the ordinary?

And lugoj, that sucks but it is sometimes fun to get surprises.
