i've had a little look and there is large meta analysis here, so basically they looked for every study possible into long term effects and pulled out the things that came up most frequently:you might know a source for a collection of Covid symptoms and complications? I caught it early so not very far from the original virus.

More than 50 long-term effects of COVID-19: a systematic review and meta-analysis - Scientific Reports
COVID-19 can involve persistence, sequelae, and other medical complications that last weeks to months after initial recovery. This systematic review and meta-analysis aims to identify studies assessing the long-term effects of COVID-19. LitCOVID and Embase were searched to identify articles with...

It does seem that most people recover fully but on different timescales.
i'm a tea drinker but truly, it does. as someone who mostly eats for pleasure rather than sustenance, losing joy in eating/drinking is petrifying.Losing the joy of coffee sucks.
If your loss of joy in coffee is due to a loss of taste/smell, there is mention of a potential way to treat it here: https://www.nature.com/articles/d41586-021-00055-6 - maybe smell training would be worth a shot?
i'm really sorry you're having these long term effects. have you been to your doctor? when i had post viral fatigue they were able to establish that it was that and not something else by doing blood tests, which somehow confirmed that i was still reacting to a virus i'd contracted 18 months ago and thus ruled out other origins for my symptoms. i know its anecdotal but i've had long post viral syndromes twice and made a full recovery both times. so you're not destined to be like this forever.
definitely get some medical advice because you don't want to wrongly assume its covid-related and thus miss out on treatment if its something else.
