What did you last eat, version four

PB & banana (2 slices). Back on that Blues (c) The Wire bread. Dunno why it's so much better than every other bread I've had.

26 days on my current "streak" and I've had 3 unhealthful meals out of 104, if I assume an average of 4 meals/day. So far so good, and I have no plans of slowing down. Discipline is the nuts!

Quick, easy, flour-free pancakes:
2 eggs
1 banana
dash of cinnamon

Wow, those look pretty amazing. How does the texture compare to normal pancakes?
 
Breakfast: ~40 oz veggie/fruit juice (grapefruit, celery, kale, ginger root, apples, orange, tomato, purple cabbage, cilantro, carrots, cucumbers, pears)

Spirulina (2 tsp)

Water + ACV

Veggie omelette (3 eggs)
 
2 tsp spirulina, water + ACV, steel-cut oats

Also had one slice of PB + banana when I woke up at 2 AM this morning
 
Woke up in the middle of the night again and had 2 PB & Banana sandwiches.

For my "official" breakfast I just had ~45oz Veggie/fruit (grapefruit, orange, beets, celery, kale, cilantro, ginger root, carrots, cucumber, red cabbage, apples, tomato) juice.

Mixed nuts w/ cranberries for brunch.
 
So I've been trying to figure out if my digestive problems are caused by wheat or dairy, and I've cut them out of my diet for a few weeks. I'll re-introduce them one by one and see how my body reacts. That severely limits what I can eat, as my typical diet included a lot of grains and dairy. Here's one breakfast idea I've found to be really tasty and satisfying, I had it this morning:

Quick, easy, flour-free pancakes:
2 eggs
1 banana
dash of cinnamon

- Mash it up and mix it in the bowl. Doesn't have to be fully mixed. You can leave the banana a little chunky.

- Heat up a pan with a small spoonful of coconut oil in it.

- Cook for a few minutes on each side.

- Use peanut butter, honey, or fruit instead of syrup!

It's sooo quick and easy. I make this a few mornings a week for breakfast and alternate it other mornings with scrambled eggs w/ tomato & avocado.


So I just finished experimenting with these, and wow are they tasty! I found the batter to be too thin for pancakes (and the texture too eggy), so I made crepes instead (stuffed with strawberries and yogurt, topped with a bit of granola). Quick, easy, delicious, nutritious. Now I'm imagining all of the potential deserts that can be made....
 
Just peeled an deveined a lb or so of shripm...one thing i miss about working in a restaurant is having someone to help with tedious prep work lol. But did a light marinade of lemon and extra virgin olive oil, salt and pepper, grilled, served over a salad of baby spring mix with a light dressing, white balsamic and a few other things. And some toasted bread. Nice easy end of summer dinner.
