Some chilled out covers, Redding has such a soulful voice that I think his version of Change is Gonna Come is the best one.

I can't find Redding's version on Youtube, but I have a really hard time imagining that his version tops Sam Cooke's, it's almost too perfect.

Unless you could provide video evidence to the contrary ;)
 
Otis did a bunch of great covers, his versions of Try a Little Tenderness, Papa's Got a Brand New Bag and Satisfaction are all great. Especially Satisfaction, I prefer his version to the Rolling Stones version, but I've never been into the Stones.

Built to Spill have a live version of Neil Young's Cortez the Killer, which is an absolute killer cover.


A few years ago Patti Smith released an album of 12 covers (called Twelve), which has some great cover versions including White Rabbit (Jefferson Airplane) and Smells Like Teen Spirit.
