How does them cooking them 3 times make them taste better? Aren't you just over cooking them but taking longer to do it than if you just left them on for ages in one go?

Never triple-fried chips, but double fried is worth it if you're doing proper chips and not 'fries'. You cook them at a lower heat for the main part until they're cooked through. Take them out, let them cool and whack up the heat. A couple more minutes in the hot oil crisps up their surface. It's definitely worth the extra few minutes.
 
Oh yeah and beef dripping ftw, if you don't mind having a flat that smells of a (decent) chippy.
 
Got a load of stale bread drying out in the oven to make breadcrumbs....making fish fingers and tartare sauce with me son and one of his mates who's come round for tea...

Nice. Don't think I've ever had ling. The only decent fishmongers round here (Stamford Hill) are Super - Orthodox Jewish places and they never seem too keen on serving me. It'll probably just have to be Haddock if I try and take on Cap'n Birdseye.
 
Ling is very good, cod family, like pollack is, but ling's flesh is firmer than pollack...pollack is flakier...

I prefer ling to cod when it's fresh, but cod freezes better than ling. The ling I'm using though was frozen within 12 hours of being caught, and had been on ice throughout, so should be excellent still.

If they don't want to serve you, i wouldn't want to go in there and suddenly find them happy to serve me, I'd be too suspicious that they give me the 3 day old shite and chuckle to themselves as i leave the shop.

Dunno man, but this is why I've been put off going to these places. They tend to be very insular and a lot are quite racist/prejudiced. I've got a black mate to whom they said outright "are you sure you want to buy your fish here?"

Kinda puts me off giving them my custom, though they do have a great range of fish.
 
Chile con carne is bubbling away in the slow cooker, will be eating shortly with rice.
 
Over cooked the chile con carne, was a bit dry and tasteless despite all the ingredients that went into it.

Got loads of bargains from Co-op just now though, meat feast pizza, mince pie, 4 quarter pounders, tub of coleslaw and irn bru, only £3.50.
 
I use dried chipotle chillis for smokiness, and a few dashes of chipotle chilli sauce, also use rind and fat off me mates smoked bacon to fry off the meat and onions, then dried chillis from our chilli plants for heat, and a clove or two. Prob the same as HP tbf

That actually does sound pretty amazing. Chipotle sauce is the business as it is, I can imagine that being really good.

And WTF by the way, nobody noticed this;

Just had a kung po chicken with cashew nuts, bamboo shoots, peppers, mushrooms, the works, with a spicy sauce and fried rice. Brilliant chinese on top of a few nice beers.

There was an article on BBC News earlier today about how the deep fried Mars bar is ruining Scotland culinary image abroad. Who's even had one? I ate one for the first time last year because a bird that came to visit me wanted to try one and I'll probably never eat one again. I don't think Scottish people actually eat them, was a craze that lasted a few weeks about 10 years ago and that's it.
