How does them cooking them 3 times make them taste better? Aren't you just over cooking them but taking longer to do it than if you just left them on for ages in one go?
Never triple-fried chips, but double fried is worth it if you're doing proper chips and not 'fries'. You cook them at a lower heat for the main part until they're cooked through. Take them out, let them cool and whack up the heat. A couple more minutes in the hot oil crisps up their surface. It's definitely worth the extra few minutes.
