I found it while trying to work out how to triple fry chips. Apparently Guardianista's love to look like they're eating like the peasants, when they're secretly eating gormet %)

I have done his triple fried chips before, but that fried egg is a step too far. :)

How were the chips? I've got the full set up ready to do them, so i'm waiting til my cheat day to do it. I won't be using proper lard or anything like that though, will it matter?

I love Heston's method of getting down to the best way of doing things. It's just so damn... logical ;)

What's the point in triple fried chips MM?
 
they taste better, not that you'd notice.

I don't triple fry chips as a rule, I rarely make chips, usually oven chips, or send the missis to the chippy if I'm doing fish in batter.

If I make chips I parboil the chips first, after destarching, then just fry them once after cooling and drying.

How does them cooking them 3 times make them taste better? Aren't you just over cooking them but taking longer to do it than if you just left them on for ages in one go?

I never make home made chips as I like McCains oven chips more than home made ones.

lol, it's hardly that much effort. It'd take at best 5-10 mins. The point in triple frying the chips is that if you make chunky ones and only fry once you end up with soggy chips or burnt on the outisde hard on the inside. This cooks them all the way through so you have fluffy centers and crunchy outsides.
 
I doubt it needs doing 3 times though to be fair. I've just knocked up some chile con carne and put it in the slow cooker, will have it tomorrow for dinner. Experimented a bit and put some squirty bovril stuff I found in the cupboard in as well as HP Smokey BBQ sauce which claims on the bottle works wonders in a chile con carne. We'll see.

Henderson's relish is the best in chilli IMO, you can only get it in Sheffield though (or on ebay :D). I've got some of that HP BBQ sauce, let me know if it's any good..

I use dried chipotle chillis for smokiness, and a few dashes of chipotle chilli sauce, also use rind and fat off me mates smoked bacon to fry off the meat and onions, then dried chillis from our chilli plants for heat, and a clove or two. Prob the same as HP tbf. :D
 
Ohh chipotle chilli sauce.. we've got an awesome hot sauce emporium in Brizzle and I'm all out, fancy a few new varieties :D <3

No to bacon rind in chilli :( I go for dried chilli too, Henderson's relish, lemon juice, cumin, oregano, and a tiny bit of allspice. All of my mates make it slightly differently, we're having a chilli-off soon :D

Mine is 25 miles away! I fucking hate them. I chose where I live to be as far away from them as possible. Slightly not true story.

Yeah the HP BBQ sauce is not bad, have had it before. We had another one before this I'm sure, might have been Hienz that was really good.

No chipotle sauce and totally forget we have chilli and tomato plants in the garden I could have been using. Onion, garlic, fresh chilli and mixed peppers (green, red and yellow) fried in chilli powder, cumin, paprika, ground coriander and cinnamon, added tin of chopped tomato, some worcestershire sauce, tomato puree, squeezy bovril stuff (I've no idea what you're supposed to do with that stuff or if it's just an ingredient), squirt of HP smokey BBQ sauce, beef stock, bay leaf (x2), dried oregano and kidney beans in chilli sauce. In the slow cooker, will cook it all night.

MacDonalds have just opened a vegetarian restaurant.

You just can't satirise shit like that.

I thought I mentioned that yesterday, the best selling burger is a sag alhoo burger. Copying me again? :sus:
 
Oh I had 2 chip butties for tea, healthy eating and paleo out the window. Now drinking cider. Lasted 2 days.
