the raw material for chocolate is "chocolate liquor", which is ground cacao beans. this pulp consists of cacao solids (when separated used as cacao powder) and cacao butter.wouldn't that just be plain cacao then? if it's 100% of that, then there's no room for sugar or anything else...?
100% dark chocolate is pure cacao (-liquor), but not "plain"- it goes through the processes of conching and tempering which can be very elaborate.
containing no sugar, it takes some getting used to, but theres big differences in quality -it can be surprisingly smooth.

I think as long as you don't eat beef cheek every single day you should be fine. Moderation it is.
