I made a very simple moong bean salad last night - boiled moong beans, mixed with chopped up tomatoes and finely chopped onions. Dressing of lemon juice, olive oil, grated garlic, grated chili and some mustard.

Topped it with a can of tuna and a boiled egg...

I'm going to do this salad with chickpeas (no mung beans), with chopped baby plum tomatoes, some diced cucumber and onions. I'll use your dressing. And add some chopped cooked green beans, hard boiled eggs and a tin of tuna. Maybe a few sliced olives too.

Kinda of a type of filling Salad Nicoise :)

We love this chickpea salad <3 - the one addition that really helps boost it up is finely chopped pickled jalapeno. If were using the Jalapeno we skip the mustard but everything else the same and it goes great with grilled meat/bbq food. If were having it as a side I skip the egg/tuna but for a main I have exactly the same as you :).

If you chop up your onions and squirt them with lemon juice add salt, give them a few minutes (do them first then add later) and it removes that really harsh oniony taste. (sorry I know your a good cook just wanted to share for any else reading)

I always have a jar of jalapenos in, excellent idea. It's a very flexible salad mix isn't it. I'll have some for my packed lunch tomorrow too.

I prefer garlic roasted rather raw and do a load to keep in a jar in the fridge. It's squishy, tasty and much gentler than raw garlic in salads especially.

Excellent idea. I'm going to do this. Balsamic vinegar is pretty good too to marinate it in, but leaves a strong taste. I like your idea better.

I find that roast garlic is pretty sweet so works great with cheesy dishes, mashed squash or potato etc (your salmon would have been nice with Roast Garlic) - especially if you had took the skin off and roasted for a bit to get crispy.

I rarely use Balsamic vinegar but my favorite dish with it (standard bottle stuff from supermarket) - Beetroot and cumin salad
 
Roast garlic made it into the watercress sauce. I reduced the poaching liquid, added the garlic, onion powder and creme fraiche with lots of seasoning heating up to wilt the watercress. It was a bought for salad but we didn't use it - on its last legs it made a great sauce.

I love spinach both raw and cooked - I normally buy the frozen pellet version as it can go off pretty quick here and its not that common. One of my faves was, grated courgette, grated onion (spices to suit your mood), mix with eggs then add a load of defrosted and drained spinach (fresh would work just as nice). Put it in a baking dish and bake for about 30 mins - let it cool and set <3, lovely with a salad.

Spinach and chick pea curry is another one as is potato and spinach curry (aloo palak) <3 - if your using fresh and raw then stir as much as you like in at the last minute or chop it up and add when your frying the onions for a softer texture. What about making a pesto with it - add nuts, nice olive oil (Or use walnut oil) etc or make a hummus with it chickpea and spinach blend with cumin, garlic etc or make it a bit drier and make spinach falafel (I usually use chickpeas and kidney beans + whatever else I like, bit floor to make a paste then fry it by the table spoon) serve that with a garlic dip or tahini (mix it with yogurt for a sour taste or use Greek Yogurt for a very creamy rich taste).

It's likely farmed and the only crown I take issue is the fucking Crown Estate cunts. Do you know how much it costs to rent the fucking seabed? It's my bitching pet hate at work :!

They try to give back to the community through the Coastal Community Fund but its fuck all compared to the money they make. Scot gov is trying to take control of the seabed to use the money for communities and development work. Of course the Crown's not so keen...

I had a crown of the Crown's swan with some Pentland Crown potatoes :p

(That's north Antrim speak for chicken and chips)
 
Husband made a great dinner last night - couple of roast chickens with roast veg and a spicy freekeh dish. Thankfully there is enough left over for dinner tonight so that saves me having to cook.
 
Easy dins tonight but so tasty. Gammon, greenbeans, asparagus and potato, cheese and onion croquettes with a bernaise sauce. Was so filling. Not posted food Porn in a while. paired with Margaret Valley X,y chardonnay.

Thanks K, I can't take the compliment though. Like I said it was an easy dinner. I cheated. The croquettes were pre-made as was the bernaise. I simply cooked the veg and slow cooked the gammon. Makes me feel like a fraud but damn was that tasty!!
