Pull up a seat this is going to take a while...
Ingredients
Garlic, chilly, lemongrass, chicken stock, ginger, onions, green peppers, coriander, oyster sauce, soy sauce, clams, salmon, courgettes, chalottes ( little onions - sic I know), corn flour and a host of spices, potatoes and a few bottles of red wine.
Firstly I made a broth of garlic, chilly, lemongrass, ginger, chicken stock, onion and fresh coriander (salt n pepper) - This I added to a pan with salt / pepper a host of spices and started to reduce.
I then chopped up some courgettes those chalotte things with garlic and chilly.
So first course – I added the above mentioned broth to some fresh clams that I had soaked to make them puke up the sand etc (dirty little fuckers – who in their right shell eats sand?)
Prior to this (so the above firstly is to be ignored) I had drenched the courgettes and little onions in garlic n chilly (with a plethora) of spices and herbs and tipped over my salmon fillets – wrapped in tinfoil and started to bake. It just so happens that (prior to this but not before step one so ...) I had steamed some new pots until they were soft and then drained, dried, crushed and doused with olive oil, garlic and chilly and baked along with the salmon.

Main meal
Oven baked salmon served on a bed of courgettes, onions – with a side of herb crusted potatoes. (these were topped with the above broth reduced/butter and corn floor added to thicken)
