Boy Sets Fire - ahead of their time....These guys were doing what bands like Thursday, Brand New, and Thrice are doing today about 6-8 years ago; and they did it a hell of a lot better. I rarely see any bands say they were influenced by this band, even when it's clear that they were.
Vision of Disorder - another extremely influential band (this time in the hardcore genre) that barely gets mentioned. If they released their self-titled album today, they would be playing Ozzfest with Hatebreed and we would be watching VOD videos on MTV 2. I am also partial to these local boys (Long Island).
Coalesce / Botch - I'm lumping these bands together because they both had a very experimental, noisy hardcore sound. Again, ahead of their time. They blow today's noisey bands like Every Time I Die and Darkest Hour out of the water. Neither band had much commercial success, but were extremely influential.
Big L - just an amazing mc. I cannot believe how many people have never heard of him. Influenced everyone from Eminem to Guru. Harlem's "real" Finest (fuck you Mace).
Canibus - has put out two of the most stellar hip-hop albums of the last 5 years, yet many people think he dropped off the face of the earth (some say this is how Canibus wanted it). These two albums "Mic Club" and "Rip the Jacker" are just raw; almost no choruses, and the most intelligent lyrics I have ever heard, period. The only one close is Immortal Technique. Many people remember his early work and his battle with LL Cool J, however, many don't realize he has been putting out some of the most killer underground hip-hop in the last few years, and is clearly at the top of his game NOW.
At the Gates - Influenced so much metal it is just ridiculous. They often do not even get noted for a sound they practically created.
Carcass - Another hugely influential metal band. One of the pioneers of grindcore; flawlessly made the transition into one of the best death metal bands ever.
Testament - Helped create the sound that made Metallica billionares. Unfortunately it wasn't so lucrative for this great band. But they are still kicking ass and taking names, while Metallica makes "St. Anger" and struggles with an overpayed band psychologist.
Skinny Puppy - pioneers. True artists. Made brilliant work in a genre that's filled with a lot of horrible shit (industrial). Everyone in industrial was influenced by them. Everyone.
Mudvayne - Definitely not underappreciated as far as record sales, but extremely slept-on by critics and "real" metal heads. Unfotunately this band got lumped with Slipknot because of their onstage appearance (and Slipknot helped get their name out before LD 50), but that is pretty much where the similarities end. So many people consider them a nu-metal band with no talent yet have never listened to one of their albums. Extremely technical, subtle, misunderstood band. I think they should be compared to a band like Tool before they are compared to a really "heavy act."
I'm tired of listing reasons, but here are a few more artists worth mentioning:

Faith No More - this band was so much better than the Chili Peppers it isn't even funny. To bad they never got the same respect / press / money.
