Hot wings:

Deep fry desired amount of wings.

Melt some butter. Do not use margarine.
Pour in some Frank's Red Hot. Add some Tabasco for heat. Whisk it all together.

Shake wings in sauce, serve.

Dont have a deep fryer and its doesnt appear to be easy that way. Anyone else?

Why don't you do a search yourself on popular food sites?

You will discover that very rarely do you find that wings are cooked in anything but a deep fryer.

You can bake the wings until they're crispy, but they're just not as good that way.

OR....

Take a *really* big pot. Like the biggest one you have. Dump a bunch of vegetable or peanut oil in it, enough to fill it about 1/2 way. Bring the oil to about 350-375. Use a candy thermometer to temp it (everyone's got one of these somewhere. It's usually in the same drawer with the orange-handled scissors and index cards with recipes for fudge.) There. Instant deep fryer.

Then proceed with original recipe.

deep fryers don't cost that much. i got mine for under $25 and its been well worth it. prior to my current healthy eating kick, i used it almost weekly to make fresh cut fries, breaded veggies, fried chicken, wings, potato chips and so on.

beware tho, deep frying tends to stink up your kitchen for awhile so try to cook near an open window.

I did search on some sites and found 1 good recipe that fit my liking. I was curious about what some bluelighters had to offer. Is this that bad or a crime?

And btw: I found that over half of all the recipes I looked at were cooked on the grill or in the oven. This includes allrecipes.com

But anyways, thanks I guess ;)

They look fucking lovely (the 29th October bit if you're looking).

I considered my suggestion helpful.

I think wings that aren't cooked in a deep fryer suck ass. :)

I love anything with pumpkin -- these are my favourite muffins ever -- and they keep well, so you can still be eating them 4 days later.

Julia's Pumpkin Muffins

Ingredients
2 cups flour (1/2 cup can be whole wheat)
1/2 teaspoon sea salt
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
2 teaspoons vanilla extract
4 large eggs
1-1/2 cups sugar (1 cup brown sugar, 1/2 cup white sugar)
1 cup oil (grapeseed, canola, safflower, coconut, or palm)
1 can pumpkin
1 cup raisins and/or chopped walnuts, or a 1/2 and 1/2 mix (optional)

Preheat oven to 350 degrees, butter muffin pan generously. In a small bowl, combine pumpkin, vanilla, eggs, oil, spices and sugar. Sift flour, baking powder, and salt. Combine wet and dry ingredients, until just barely mixed (batter will be clumpy). Add raisins/nuts. Pour batter into greased muffin pan (or into muffin/cupcake liners), filling each cup. Bake for 25-30 minutes until fork into center of a muffin comes out clean.

Another favourite recipe -- seems so simple, but the flavour is amazing.

GRILLED LAMB KEBABS WITH CUMIN AND CINNAMON

Inspired by Middle Eastern cooking.

1/4 cup olive oil
1 teaspoon ground cumin
1 teaspoon ground black pepper
3/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 3 1/2-pound sirloin half leg of lamb, bone removed, fat trimmed, meat cut into 1 1/4- to 1 1/2-inch pieces
6 12-inch metal skewers
Whisk oil, cumin, pepper, salt and cinnamon in 13x9x2-inch glass baking dish. Add lamb to dish and toss to coat well with oil mixture. Let marinate at room temperature 1 hour or refrigerate 1 1/2 to 4 hours, tossing occasionally.

Prepare barbecue (medium heat) or preheat broiler. Thread lamb pieces onto skewers, dividing equally (about 5 pieces per skewer). Grill or broil lamb to desired doneness, turning occasionally, about 6 minutes for medium-rare.

Makes 6 servings.

If you don't like lamb, it also works well with beef. I would use sirloin if you go with beef. I usually marinate overnight for more intense flavour.

do you think these'd work with egg-replacer instead?
:)

If you have soy lecithin, and use that as an egg replacer, that would probably work best. I've tried to find out the ratio of water:lecithin to use as egg replacer, online, but I haven't had any luck and I don't remember. But basically you mix the water and granulated lecithin and heat it in a small frying pan until the granules dissolve and the mixture thickens to an egg-y texture. Then you just mix it in hot.

You could probably also do the vinegar and baking soda trick as an egg replacer, but I think the texture wouldn't be as good as if you went with lecithin.

I know you're vegan, and I used to cook for several vegans -- there is this GREAT vegan chocolate cake, that's better than any other devil's food style chocolate cake I've ever tasted. I'll see if I can find the recipe for you.

Btw, the cumin and cinnamon recipe might work well with seitan, if you're familar with that.

I think I found it:

Dark Moist Rich Vegan Chocolate Cake

* 1 1/2 C. flour
* 1/3 C. cocoa powder
* 1 tsp baking soda
* 1/2 tsp salt
* 1 C. sugar
* 1/2 C. vegetable oil
* 1 C. cold water (could subsitute soy or rice milk here)
* 2 tsp vanilla extract
* 2 tsp apple cider vinegar

Preheat oven to 375. Mix dry ingredients together. Mix the oil, water, and vanilla extract in a separate bowl. Add the mixed wet ingredients to dry and stir until mixed. Add vinegar and stir. Put the cake in the oven immediately and bake for 25 to 30 minutes, or until a wooden toothpick inserted into the center removes cleanly.

Whole Wheat Pancakes:
1 1/4 cup Whole Wheat Flour
1 1/2 cup Milk
1 egg
1 T baking powder
1 T cinnamon

Whisk and cook!

^ I'm a lacto-ovo veg, but sometimes I subsitute cooked oats for the egg and soymilk for the milk.

oooh...I've made that cake before. It pwns. I have a shit-load of energy egg replacer (tm) laying around that I rarely, if ever, use (I don't really like sweets much). I was thinking muffins might be nice for a change.

I've toyed around with making seitan, but it is kind of a pain in the ass to make, and doesn't come out quite right. It is prohibitively expensive for me to buy.

ebola

Darn, seitan here is pretty cheap. :\

I'm not a fan of energy egg replacer. Lecithin is so superior for emulsifying, which is what eggs do in muffins. I've used EER before but in every application I've greatly preferred lecithin. I highly, highly recommend it. I couldn't possibly bake vegan goodies without it.

Everyone knows what google is. If you wanted to let me know that in you're opinion wings that werent cooked in a deep fryer sucked ass, you would have said it.

Everyone seems to be real tense around here recently. Years ago it was much different. Thanks for the "advice" though. Im giving you a hard time I know, not meaning to be a dick. I just wish people would relax more on BL.

The thing is, I acquired this box of EER for free. :)
On the other hand, the lecethin could provide a nice choline boost.

Like, ready made? Around here, it's like $3.50 a pckg. Where do you get it? What brand?

ebola

Probably like $3 a package. We have white wave chicken style and the beef style that is packaged by whole foods.

That's still cheaper than meat...I don't really see how it's prohibitively expensive...how small are the packages?

Each package has 2 good sized servings I would say.

okay...yeah, these are what I was thinking of.

I still think it's expensive. I
1. Have never bought meat before.
2. Live below the poverty level.

Italian Veal, for you carnivores out there

Ingredients:

.5lb -1lb of veal
2 tablespoons extra virgin olive oil
1/2 cup chicken broth
2 tablespoons flour
1 tablespoon butter
1 Whole lemon's juice
A pinch of salt
A pinch of pepper

Mix all the ingredients, minus the meat, in a pan, heat over medium-high temperature until sauce thickens. Throw the veal in. The veal cooks pretty fast. Make sure to flip it when it starts curling up. You want it to be slightly brown on both sides. Its a damn good dish, everyone I have made it for likes it.
