I love anything with pumpkin -- these are my favourite muffins ever -- and they keep well, so you can still be eating them 4 days later.
Julia's Pumpkin Muffins
Ingredients
2 cups flour (1/2 cup can be whole wheat)
1/2 teaspoon sea salt
2 teaspoons baking powder
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
2 teaspoons vanilla extract
4 large eggs
1-1/2 cups sugar (1 cup brown sugar, 1/2 cup white sugar)
1 cup oil (grapeseed, canola, safflower, coconut, or palm)
1 can pumpkin
1 cup raisins and/or chopped walnuts, or a 1/2 and 1/2 mix (optional)
Preheat oven to 350 degrees, butter muffin pan generously. In a small bowl, combine pumpkin, vanilla, eggs, oil, spices and sugar. Sift flour, baking powder, and salt. Combine wet and dry ingredients, until just barely mixed (batter will be clumpy). Add raisins/nuts. Pour batter into greased muffin pan (or into muffin/cupcake liners), filling each cup. Bake for 25-30 minutes until fork into center of a muffin comes out clean.
