Noodle Pudding
This is not the desert style pudding most of you will think of when seeing the name.
This recipe has been in our family forever and we all love it. I just made some myself for the first time and it reminded me how much I like it so here ya go.
Youll need:
9 X !3 Pyrex dish
1/4 cup sugar (maybe a little more if youd like it a bit sweeter)
6 eggs
3/4 tspn kosher salt
1lb small curd cottage cheese
1 pint sour cream
1lb med. width egg noodles
1/4 lb butter
1/4 cup milk (preferably whole)
1 1/4 cup crushed corn flakes
12 turns of fresh ground pepper (sorry we use a grinder so im not sure what it equals to in measurements...its really just to taste though)
- Preheat oven to 375. Melt butter in dish.
- Boil Noodles
- Once noodles are boiled empty water, add 4 eggs beaten, 1lb cottage cheese, 1 pint sour cream, 1/4 cup sugar. Add salt & Pepper as well
- Make sure all above ingredients are mixed well
- Pour into pyrex dish, let it stand for 10 mins to settle in.
- Beat 1/4 cup of milke and the last 2 eggs and pour over the top.
- Sprinkle corn flakes over the top
- Bake for 1 hour @ 375
Cut in squares, rectangles, triangles...whatever :D
You can eat this warm out of the oven, microwaved leftovers ( i prefer this lol) or cold. Its yummy!
