I believe velveeta is cheese, no?

P.S. Yes, I know I need to update the index, but my heater isn't working and therefore either are my hands, cos it's too bloody cold... will do soon!

Of course it's cheese. It's chedder cheese and it's served melted on everything from broccoli to french fries.

what is Velveeta ?

^^ It is not exactly just cheddar cheese. It is American cheese which means it is a heavily processed cheese made up of a few different cheeses and cheese curd. Short of squirting your cheese from a can it is the most unnatural and unhealthiest type of cheese you can possibly eat. In fact, they are not allowed to even call it cheese but a" pasteurized process cheese spread " and Velveeta Light is pasteurized process cheese product.

I found this link on cheese and have cut and pasted it for you:

Pasteurized process cheese food is a variation of process cheese that may have dry milk, whey solids, or anhydrous milkfat added, which reduces the amount of cheese in the finished product. It must contain at least 51% of the cheese ingredient by weight, have a moisture content less than 44%, and have at least 23% milkfat.

Pasteurized process cheese spread is a variation on cheese food that may contain a sweetener and a stabilizing agent, such as the polysaccharide xanthan gum or the Irish moss colloid carrageenan, to prevent separation of the ingredients. The cheese must be spreadable at 70 F, contain 44 to 60% moisture, and have at least 20% milkfat.

Pasteurized process cheese product is process cheese that doesn't meet the moisture and/or milkfat standards.

Imitation cheese is made from vegetable oil; it is less expensive, but also has less flavor and doesn't melt well.

~~ Sounds gross? It is. Stay away from Velveeta if you care about your health.

mmm, meatloaf

animal cookie's meatloaf and potatoes

*2 lbs ground beef
*1 packet of onion soup mix
*1 tsp soy sauce
*2 tlbs ketchup
*2 tlbs bbq sauce
*1 cup of bread crumbs
*2 eggs
*6-8 red potatoes
*brown sugar
*butter
*various seasoning/spices

preheat the oven to 350F. in a large bowl, combine everything but the potatos, butter and spices. it woks best if you just mash it with your hands like you a kneading dough. when its all mixed together, shape into a loaf and put on a baking sheet. sprinkle a generous amount of brown sugar over the top and sides of the loaf.

cut the potatoes into bite size chunks. toss the potatoes in a large bowl with melted butter. season them however you would like, i just use whatever spices i have on hand. spread the potatoes around the meatloaf on the baking sheet. bake in the oven for an hour.

and now a recipe i posted in another thread awhile back.

banana chai bread

1 2/3 cups of mashed up bananas*
1 cup of sugar
1/4 cup of butter, softened
1/4 cup of silk chai*
1/4 cup low fat sour cream
2 large egg whites
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon of salt
cooking spray

1. combine sugar and butter in bowl and beat at medium speed until blended.
2. add the banana, silk chai, sour cream and egg whites and mix well.
3. combine flour, baking soda and salt and add the dry ingredients to the banana mixture.
4. mix until well blended. spray a medium loaf pan with cooking spray and spoon batter into the pan.
5. bake at 350F for about 45 minutes.

*the recipe says you will need about 3 bananas but i end up using more like 5-6 bananas.
*silk chai is a soy based product that is often in the organic section or dairy section of grocery stores.

i also like to sprinkle a little bit of brown sugar on the top for an extra crispiness and sweetness.

mulled wine

this is a great wintertime recipe when its cold out and you need to warm up. plus, it will make your house smell amazing :)

*750ml bottle of red wine. it can be cheap but make sure its full bodied.
*2 lemons
*2 oranges
*1-2 shots of brandy/cognac
*2 tea bags of a fruity flavored tea
*whole cloves
*cinnamon sticks
*sugar

slice the lemons and oranges into really thin slices. pour the wine into a crockpot set on low. add the sliced fruit, cinnamon sticks and cloves. in the microwave, heat up two cups of tea. add sugar to the tea to your liking. then add the tea to the crockpot and leave simmering.

there are a million mulled wine recipes around. this is one i customized to my liking. i didn't include amounts for the cinnamon and nutmeg because i just add it until i like the taste. as you make it, just take a small sip and experiment to get the right taste for you. and a cute tip for serving is to garnish each glass with a mini candycane.

I just thought of another :)
Chorizo and sweet potato stew
for 2 people you will need
3 cooking chorizo, preferably undried. The chorizo I normally get are each about 6" long
1 red onion
2 large sweet potatoes
2 medium potatoes of the more waxy variety... I like to use small new potatoes for this, if you're using new potatoes, a handful for each person is plenty (4-6 each depending on size)
a tin of plum tomatoes
mixed beans (tinned or dried. if tinned, wash, if dried, soak according to instructions)
salt, pepper, parsley, garlic, olive oil, balsamic vinegar, red wine

- Thinly slice some garlic
- Slice each chorizo diagonally into about 10 slices.
- Heat a pan with a little olive oil... just enough to stop the chorizo from sticking because it has plenty oil of its own.
- Coarsely chop the onion.
- Add all the above to the pan and saute for about 10 minutes making sure both sides of each piece of chorizo gets cooked.
- Throw in a splash of balsamic vinegar and a good dash of red wine, let simmer on a lower heat for a few minutes while you peel and chop all the potatoes into thumb sized chunks (unless they're babies, in which case, just give them a rinse and half them)
- Put the potatoes in a pot, add enough lightly salted water to just cover them and put on high heat.
- Add tomatoes to the pan with chorzio, keep on low heat.
- Once the potatoes start to boil, reduce the heat, add the beans and the contents of chorizo pan and let simmer while partly covered for about 45 mins - 1 hour.
- Towards the end, add another thinly sliced clove of garlic, a very small handful (or very large pinch :D) of chopped parsley, salt and pepper.
- Serve in deep stew bowls with loads of crusty bread.

I'm making this tonight... I'll let you know how it goes :)

Here's a simple one:

Kicked up Kielbasa and Rice

This is actually something I made up. One day while fucking around, I threw everything into a pot and it worked.

about 1lb Kielbasa (can be any type you'd like)
1.5 cups of rice
Soy Sauce
Worcheshire Sauce
either Snowpeas or Broccoli or Peas.

Here's what you do...cut a link of Kielbasa into 1/2 inch slices and sautee them up in a skillet. Then...add about 1 .5 cups of rice to the frying pan. Stir...

Add about 1/4 cup of Soy Sauce
and about 3 Tablespoons of Worceshire Sauce

Add your water for the rice and bring to a boil (usually its a 2 to 1 ratio of water to rice)

After it comes to a boil, turn down the heat to low and cover the pot. Wait about 20 minutes. Add freshly steamed broccoli or snow peas and stir into the mixture.

Serve...it is VERY VERY VERY yummy, and very easy.

Here's a seafood one

Spicy Shrimp

This goes best with a light vegetable like asparagus or the like.

Get a lb of medium sized shrimp from the store. Make sure they are raw! And make sure they are not peeled.

In a pot...combine a 1/4 cup of Vinegar, 1/4 cup of water, 2 tablespoons of Old Bay seasoning (you can find this in the seafood section of the grocery store, NOT the spice section), and some salt and pepper.

Bring the mixture up to a boil, then add the shrimp and cover. Steam for about 3 minutes.

Drain the excess liquid, and enjoy the shrimp as an appetizer or part of a meal. They are a bit spicy. I'm a spice nut so I always add a few dashes of Texas Pete to mine.

And guess what, it was fucking fantastic. I ended up cooking for 5 people so doubled the recipe pretty much. I think I used too many chorizo though, seven would have been enough (I used eight). I didn't use the beans either, mainly because I couldn't fit anything else in the two pots I ended up using.

It's so tasty - the sweet potatoes are just breaking down at the end of the cooking and there's a beautiful contrast between them and the waxy new potatoes. We had it with some nice red wine and fresh bread from the deli. I even have some leftover which is going to be a snack tonight after the pub I think.

Top stuff mate - I owe you a pint!

Easy Homeade Ginger Ale with Bourbon

I made this at the Super Bowl and it came out great. You have to toy with what amount of sweetness you want, but it tastes better than the bottled shit by FAR! You can leave the bourbon out, just make sure you add some extra soda water if you do.

2 cups sugar
1 cup water
1/2 cup sliced ginger (peeled too)
10 cups soda water
4 cups quality bourbon
Ice cubes
16 orange wheels, for garnish

Combine sugar, water, and ginger in large saucepan (ginger should be in small slices). Bring to a boil over medium heat and stir until sugar dissolves. Once sugar dissolves, remove from the heat and let stand until cool. Strain through a fine sieve.

In a large pitcher, combine the cooled ginger syrup with the soda water and bourbon. Stir to combine. Fill 16 tall glasses with ice and top with the ginger-bourbon mixture. Garnish the rim of each glass with an orange slice and serve immediately.

For individual serving, combine 2 tablespoons of syrup with 1/4 cup of bourbon and a little over 1/2 cup of soda water.

really really really good stuff.

Does anyone have any recipies where I would be able to pre-marinate (or marinade not sure how you spell it) meat (chicken or beer preferably) so I could throw it one a grill later? I'm planning on trying the Korean BBQ recipie.

Also does anyone have any really good bbq sauce recipies?

I'm going to a festival this weekend and would like to be able to cook for my friends. So any good recipies which are simple and serve alot would be appreciated! I'm thinking a taco recipie would be good but I don't know.

oh WOW i made the best dinner tonight.

Garlic Chili Cod & String Beans

preheat oven to broil.

ingredients:

some cod loins
a bunch of green onion, chopped
a couple cloves or garlic, minced
some olive oil
juice from a whole lime
a can of chopped mild chilies
salt
pepper

mix everything but the cod lons together. marinate cod loins in mixture for a few minutes while you prepare the beans:

some string beans/green beans (fresh preferred but frozen/thawed are fine-- NOT CANNED WHATEVER YOU DO.)
a half a vidalia onion, thinly sliced
a little olive oil
a little red pepper
some black pepper
salt... if you must. i didn't.

throw your cod in a baking pan with all the mixture chunks on top. then throw it into the oven and tend to the beans.

slice the onions THINLY. throw all the beans/onions/etc in a skillet and start sauteeing or whatnot. they will be done in about 7 or 8 minutes, but they will be nice and crisp. make sure the onion is thinly sliced so it will cook nicely! take them off the heat and grab your cod (that takes about 15 minutes probably less.)

viola. that dinner took me 30-40 minutes. i think adding almonds to the beans woul be fucking fantabulous, but didnt try. i wanted some ginger for the cod as well but i figured id save the ginger recipe for when i had some salmon, which is what this recipe is really for. try it with any fish :) like tilapia ... mmm.

**BTW: this is sooooo low-carb its not even funny. and fucking GOOD.

I tried the Korean BBQ recipie.. itsx delicious

I'll rtype more when I'm less drizzittydrunk.

Thatnks for the updat Kel!

[edit] - All I can say is wow, I really need to stop posting when intoxicated. I ended up trying AcidFiend's Korean BBQ recipiee and it was really good. I have a bunch of meat marniate still that I'm gonna cook. It made my family really happy as well.

Oh yeah and thanks for the update Kel
