In the process of making Nowonmai's pumpkin and sweet potato soup...........it sure looks good already...........lol.
 
simple pizza

Pizza dough (I don't make it from scratch because then it would no longer be "simple" but you can go right ahead)

Spread tomato paste on pizza dough.
Put thin slices of fresh garlic on tomato paste.
Add some fresh herbs (I use big pieces of basil).
Add some mozarella.
Add some slices of mushrooms, sundried tomatoes, whatever.
Add fresh spinach.
Top with a little more mozza and some feta.
Bake until cheese is starting to brown.

Actually I love making my own pizzas and they are so simple.

Quick tip is to not worry about the pizza dough or even buying pizza bases................just use lebanese bread or any of those round type flat breads..............even pocket or pita bread works fine.............and gives an exciting new taste to the base as well.

And yes as suggested above.............just add whatever your heart desires.

That is my FAVOURITE meal.

I buy Pita bread, smother it in Ardmona tomato and basil pizza sauce, and top with mushrooms, capsicum (peppers, for the Americans)- green and red, zucchini and grated cheese, then pop olives and sundried tomatoes on top.. sprinkle with garlic salt, basil and oregano and bake in the oven for 15 min. Luscious. :)

Ended up getting about 4 decent sized tubs full to freeze. Each tub would hold enough for 2-3 serves.

Looking forward to the next one.
 
This recipe is really flexible, the ingredients list is more of just a guideline. I have made it with creamed corn instead of regular corn, or 1/2 cup milk instead of a whole cup, I've added onions and garlic sometimes, sometimes I toss in a handful of shredded Cheddar or Monterey Jack cheese, you could also add cut up cooked chicken, use your creativity!



Supereasy Corn Chowder

Ingredients:

1 can Campbell's Cream of Potato Soup
1 11oz can Green Giant Niblets (or any canned corn, really)
1 cup milk (whole or 2%, not skim)
4 slices cooked bacon (that microwave kind works just fine)
1/4 teaspoon salt (or more to taste)
Pepper (to taste)


**Drain the corn, if you use regular canned, not creamed.


Combine potato soup, corn, milk, and salt and pepper in saucepan. On low to medium, heat until it starts to simmer. At some point in the simmering, crumble the bacon into the pot. It's done when it is hot enough for you.

Serve with oyster crackers! Altogether, this takes about 10 minutes from start to finish.
 
Banana and Chocolate Wontons

This dessert is very addictive. People always ask me to make it.

1 Package of wonton wrappers (in regular grocery store in asian section)
1 banana
*1 large bar of Chocolate (You can use dark chocolate also)
1 cup of cinnamon sugar (just mix sugar with cinnamon)
2-3 cups of oil for frying
Small dish with water

Cut banana and chocolate into 1 inch pieces. Lay out 1 wonton wrapper at a time and put 1 piece each of the chocolate and banana in middle of wonton. Using your finger, dip it into the water and wet all outer edges of wonton. Then fold over to make a triangle shape and press down all sides to seal (water helps keep it sealed). Keep going until all wontons are done.

Heat oil and fry wontons until golden brown on both sides. As soon as it comes out of the oil drop it into cinnamon sugar and coat evenly and put aside in separate dish. Goes really well with French Vanilla ice cream.

*As a side note make sure your chocolate has rounded edges so that it won't puncture the wonton wrappers. =D =D =D
 
Spinich tomato soup-

4 cups fatfree veggie broth
2 cans diced tomatoes (I think thats 28 oz?)
10 oz fresh spinich, no stems
1/2-1/4 onion
Two carrots
Two celery stalks
2 Bay leaves
Pinch of oregano
Pinch of basil.

Basically just chop everyting (except the spinich and bay leaves) and throw it in a slow-cooker for five hours on high. Makes a VERY tasty, very CHEAP and very very VERY healthy soup that has tons of vitamins and stuff. I like to substitute 2 chopped (not pressed) garlic cloves for the onions--I hate onion smell. Yuck
 
Great thread!! I'm really getting into cooking and I'll comment on the recipies as I do them.
 
Usually any asian dish with noodles is going to be something stir-fried w/ veggies and the noodles. If you are looking for anything fancier than that, I would reccomend getting a Thai cookbook (Thai food is more 'elaborate' than standard japanese/chinese cooking). That is, unless someone here knows how to cook Thai food and can share a noodle recipe ;)

3 Cheese Grilled Cheese

This is a simple recipie that you can cook up really quickly. Its great for inbetween classes or on a lunch break

What you need:

2 Slices White bread
1 slice Colby
1 slice Havarti
1 slice Cheeder
Worchester Sauce
Onions
Butter (garlic butter is best)

What you do:

Warm up a frying pan and cut three slices of butter so you can throw them on the pan. Throw butter on pan and sautee some onions in it (as many as you want, cut as large or small as you like) then set them aside. Next prepare sandwhich by putting cheese on piece of bread then add dash of worchester sauce and onions on top of cheese and top with second piece of bread. Then throw second piece of butter on pan and let it melt, then place sandwhich on top. Wait until it is browned to you liking then pick up sandwhich with spatula and toss the third slice of butter on pan and wait till it melts. Then place unbrowned side of sandwhich down and cook. Make sure the cheese is melted and then serve.

This is how I make my grilled cheese sandwhiches.. but there are obviously many different ways.

Oh yeah these also go great with beer :D

Chicken Enchilada Soup

It's a clone of the recipie they use at Chili's. I made it yesterday and its damn good.

What you need:

1 tablespoon vegetable oil
1 lb. of chicken breast fillets (approx. 3 fillets)
1/2 cup diced onion
1 clove garlic, pressed
4 cups chicken broth
1 cup masa harina
3 cups water
1 cup enchilada sauce
16 ounces Velveeta (I'd recommend some real cheddar)
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon cumin

Garnish:

shredded cheddar cheese
crumbled corn tortilla chips
pico de gallo

Instructions:



1. Add 1 tablespoon of oil to a large pot over medium heat. Add chicken breasts to pot and brown for 4-5 minutes per side. Set chicken aside.
2. Add onions and garlic to pot and sauté over medium heat for about 2 minutes, or until onions begin to become translucent. Add chicken broth.
3. Combine masa harina with 2 cups of water in a medium bowl and whisk until blended. Add masa mixture to pot with onions, garlic and broth.
4. Add remaining water, enchilada sauce, cheese and spices to pot and bring mixture to a boil.
5. Shred the chicken into small, bite-size pieces and add it to the pot. Reduce heat and simmer soup for 30-40minutes or until thick.
6. Serve soup in cups or bowls, and garnish with shredded cheddar cheese, crumbled corn tortilla chips, and pico de gallo.

EDIT: Heating up some corn and flour tortillas to dip if you want to.

P.S. Yes, I know I need to update the index, but my heater isn't working and therefore either are my hands, cos it's too bloody cold... will do soon!

Tator Tot Casserole

Here is one that is real quick & easy and real yummy and all the kiddies love it including the biggest kid of them all, my husband.

Tator Tot Casserole

1 package frozen tator tots
1 (16 ounce) container sour cream
1-2 cups shredded cheddar cheese or cheddarjack
1 (10.75 ounce) can condensed cream of celery or mushroom soup (or once i used cream of brocolli & cheese which i had made myself and it was super delicious)
1 can French-fried onions


Directions
1 Preheat oven to 375 degrees F & grease a baking pan.
2 Arrange tater tots in the prepared baking dish.
3 In a mixing bowl, combine sour cream, 1 cup cheese, & soup. I also like to add a little garlic salt or seasoning salt in there. Pour this mixture over the tater tots and kind of just spread it around so it is down between the tators. I like to put another cup of cheese across the top and then i sprinkle the dry onions over the top of the casserole. The second layer of cheese is not necessary. You can just use one cup in the mix if you want to reduce the fat.


4 Bake at 375 degrees F oven for 60 minutes.


The best thing about this dish is the leftovers. The next day you can fry it in a pan to heat it like hashbrowns and eat it with some eggs or whatever for breakfast. It's great. It's also good to premake before a camping trip and heat it in a dutchoven or cast iron skillet again later. *SLURPS*
