oh WOW i made the best dinner tonight.
Garlic Chili Cod & String Beans
preheat oven to broil.
ingredients:
some cod loins
a bunch of green onion, chopped
a couple cloves or garlic, minced
some olive oil
juice from a whole lime
a can of chopped mild chilies
salt
pepper
mix everything but the cod lons together. marinate cod loins in mixture for a few minutes while you prepare the beans:
some string beans/green beans (fresh preferred but frozen/thawed are fine-- NOT CANNED WHATEVER YOU DO.)
a half a vidalia onion, thinly sliced
a little olive oil
a little red pepper
some black pepper
salt... if you must. i didn't.
throw your cod in a baking pan with all the mixture chunks on top. then throw it into the oven and tend to the beans.
slice the onions THINLY. throw all the beans/onions/etc in a skillet and start sauteeing or whatnot. they will be done in about 7 or 8 minutes, but they will be nice and crisp. make sure the onion is thinly sliced so it will cook nicely! take them off the heat and grab your cod (that takes about 15 minutes probably less.)
viola. that dinner took me 30-40 minutes. i think adding almonds to the beans woul be fucking fantabulous, but didnt try. i wanted some ginger for the cod as well but i figured id save the ginger recipe for when i had some salmon, which is what this recipe is really for. try it with any fish

like tilapia ... mmm.
**BTW: this is sooooo low-carb its not even funny. and fucking GOOD.
