TG'S Vegan Feast Pizza:
You'll need:
* Handful of black pitted olives
* 2 chillies, finely sliced
* 2 cloves of garlic, crushed
* 1 red onion, sliced very finely
* 1 courgette, cut into medium sized slices
* Jar of sundried tomatoes in olive oil
* Jar of roasted red peppers in olive oil
* 4 tsp of dried basil
* 1/2 tsp dried oregano (the good shit)
* 6-7 large tomatoes
* Handful of pumpkin seeds (missing from pic)
* Plain flour (for flouring the surface when rolling out base)
* Olive oil
* Pizza base mix (or if you're too lazy, buy one of those ready made ones from the supermarket)
1) Slice onions and chillies as finely as possible. Heat a frying pan with a little olive oil, add 2 tsp of dried basil, and 1/2 tsp of oregano to the hot oil. Heat for a moment or two, then add the onions (keeping the chilli aside). Once the onion starts to colour add the minced garlic and chilli for a few minutes, then turn off the heat and leave to one side.
2) Boil the kettle and fill a medium saucepan almost to the top with boiling water. Plop your tomatoes in there for a minute or two, then carefully lift them out. Peel off the skin, then dice them as small as you can. Turn the heat on again for onions then add the tomatoes to the frying pan. Set on a moderate heat and leave to bubble away.
TIP: As the tomatoes cook, mash them a little with a fork to help them break down.
3) Step 3 is where I make my base. If you buy the boxed mix, follow the instructions on the pack. I also add 2 tsp of dried basil to the mix too.
4) Slice your courgette into medium slices. Coat them in a little olive oil, add salt and pepper and pop them on a baking tray. Give them 5-6 mins on 200 degrees, turning once. Once cooked removed from oven and set aside.
5) Prepare all your toppings on a plate and wait for the tomato sauce to thicken to a paste.
6) Take your base, spread the tomato sauce over the top, slap toppings on, and whack it in the oven for 20 mins on 200 degrees.

My base turned out a bit pathetic looking this time, but it still tasted OK. Also, the pumpkin seeds worked well. Cheers Shammy.
