This one is a little more complex but sometimes I get really high with my girlfriend and we just make complicated shit, it is very worth it tho!
Mini Breakfast Calzones:
Make a simple pizza dough (flour, water, yeast, sugar, salt, oil, etc...) or buy raw dough and roll it out as flat a you can get it but still strong enough to be stretched without ripping. Take wide mouth coffee cups or something similar and use it to cut out 6 or so circular pieces of dough and set them aside, keep them well patted down with flour so they don't stick.
Cook 2 or 3 eggs, scramble, cook as much spicy breakfast sausage as you desire (I use about half a package of niece's spicy breakfast sausage, I have used vennesen sausage and that is amazing too!). Set these aside...
Mix about 1/2 cup of mozzarella with a 1/2 cup of freshly grated cheddar, and add this to 1 cup of ricotta and mix well into a cheesy paste like substance. Take a dough circle, brush with olive oil, and spread about a quarter inch to a half inch of cheese shit and layer a good sized portion of scrambled eggs and sausage on top. Lay the corresponding piece of dough on top, crimp the edges up, and bake for 15 to 20 minutes (until golden brown), on 425F.
