Somen noodles with spinach, asparagus and mushrooms, topped with soy sauce and a "hot and sweet jalapeno mustard" sauce/dip. Mmmmmmm.
 
Raw chocolate avocado mousse/pudding. Homemade but not by me... Yet. Because this was that good. The ingredient list provided by my neighbor just said "avocado, dates, cocoa powder" but everything I'm finding online lists vanilla extract as well. Either way, it is so. good.

A friend of mine found a restaurant here having eat all-you-can veggie / tofu buffet for... 0,53 euro. I had some cooked veggies: spinach, califlower, tomatoes, something between cucumber and melon (they call it 瓜 gua in mandarin), papaya + rice noodles, lots of tofu, sprouts and chilli sauce. Lots of cheap, tasty and nutritious food, I mean its overall cheaper here but this one is some really great value. Mind you 0,53 euro.
 
Figured out the key to making phenomenal popcorn on the stove: Very high heat and a lot more oil than I originally thought. Those two keys made for the. best. popcorn I have had to date. Topped one bowl of it with garlic sea salt, and another with nutritional yeast. Debating making more. :D

Yes! <3 My mom watched me prepare this with skepticism, and mustered the courage to try a bite -- she looked like someone trying to swallow a marble, haha. I was shocked! Anyways, it's definitely a yummy one in my book.
 
Breakfast:

Amaranth porridge, cooked with finely sliced apple; mixed with sliced dates, and covered with chopped toasted walnuts.


I actually highly advise any breakfast-porridge / oatmeal lovers to try making an amaranth porridge; particularly in the aforementioned recipe. Amaranth is the perfect breakfast grain... almost think I like it better than oats.
