Summer foods and recipes

Fuck me there is some tasty stuff going on in this thread! :D


Recently when I had an influx of mangoes (I refuse to pay for them so tend to either have a shit load or none at all) I was putting a mango, ice, a little apple juice and a metric cavernous kunt load of vodka in a blender. So tasty and holy shit does it get you fucked up :D
 
2 tins of Golden circle fruit punch.
2 Tins Golden circle fruit salad.
Bottle of plonk.
Bottle of ginger ale.
3 bottles of Vodka.
2 Bags of ice from the servo.

Lunch is served.
 
Bunnings has 8L buckets.

Then go to Big W and check the kids toy section for sandpit toys, you know the really small buckets kids take to the beach, buy up.

They hold a decent amount of punch.

You don't to refill all the time and you can stay seated in the blow up kiddy pool all that much longer =D
 
While we're on the summer fruit theme, you can make a tasty salad with cubed watermelon, a little feta, generous amount of lime juice, heaps of roughly chopped mint and a tiny bit of olive oil. :)

Add prawns and a touch of chilli to that and you have the MOST divine summer salad out there :)

We recently made a Peach and Strawberry pie :)

Around 6 white peaches and 6 yellow peaches
1 punnet of strawberries.

Make shortcrust pastry:

100g butter
200g flour
~50g of icing sugar into the mix
2 eggs
pinch of salt

Add peaches, strawberries, some brown sugar and a splash of balsamic vinegar into the pie. Put pastry top on pie, eggwash the top and poke some holes in it. Bake in oven for ~40 minutes at 180°C

Eat with store-bought custard :)

Oh and fruit smoothies are always good in Summer - at the moment breakfast in my house is an apple/raspberry/strawberry/blackberry/mango/banana smoothie, made with plain yoghurt and a bit of milk. And a sprig of mint if there is any in the house.

Tastes super yummy, is well good for you and is a much easier way to get your required dose of fruit than eating separate pieces.
 
^ blasphemy! you need pine nuts for pesto! :D

(i know i know they are awesome for rice dishes too like lightly toasted in a pilaf mmmmmm)
