OK so my girlfriend is talking about wanting to do the "convict conditioning".. I think it's an all round strength regime..

Anyone got any links to information, videos, etc (she's lookin for step by step guides) along these lines?
 
Ask her to define it. Can't speak for anyone else but I won't exactly do the leg work for ya. -shrugs-

The only thing that comes to mind are burpees.
 
Well she does:

40 narrow squats
10 press ups
40 full lunges
10 press ups
40 sumo squats or 20 jumping squats
2 x sets of 40 leg raises
2 x sets of 40 side to side leg raises

lol... convict conditioning. Does that mean you should be built like a brick house in case someone randomly attacks you? Is that your goal?

Her regimen is pretty well thought out, but your body's needs might not match her's.
