Slow Cooker or Crockpot recipes.

I didn't want to put this in the quick and simple recipes, because they are different, and above all, aren't quick. If mods disagree, feel free to close or merge it.


I recently bought one, and today cooked a beef roast in it with a garlic/rosemary/dry thyme/dry basil/pepper rub on it and stock instead of water. Carrots/potatoes and an onion for veges.

It turned out ok, but I reckon it was a bit overcooked, because I didnt use enough meat.

Anyway, I want some great _proven_ recipes from people who own slow cookers. I know there's heaps of potential. I say proven, because anyone can google something like this, and even the manual that came with it suggested google, but tried and tested recipes are the best.

I reckon my next attempt will be a curry. I can just taste the 10 hour soaked spices now....mmmm
 
What a lame manual - "Just go and search google".

My favourite slow cooker recipe is the Chinese Chicken Soup. Here is the recipe.

Crockpot Chinese Chicken Stew

1 pound chicken thighs, boneless, skinless
1 teaspoon Chinese five-spice powder
1/2 teaspoon red pepper flakes
1 tablespoon vegetable oil
1 medium onion, coarsely chopped
8 ounces fresh mushrooms, sliced
2 garlic cloves, finely minced
1 (14-1/2-ounce) can chicken broth, divided
1 tablespoon cornstarch
1 medium red bell pepper, cut into 3/4-inch pieces
2 tablespoons soy sauce
1 tablespoon sesame oil
2 green onions, cut into 1/2-inch pieces
3 cups hot cooked rice (optional)

1. Toss chicken with five-spice powder in small bowl. Season with red pepper flakes.
2. Heat oil in large skillet. Add onion and chicken; cook and stir about 5 minutes or until chicken is browned.
3. Add mushrooms and garlic; cook and stir until chicken is no longer pink or juices run clear.
4. Combine 1/4 cup broth and cornstarch in small bowl; set aside.
5. Place cooked chicken mixture, remaining broth, bell pepper, and soy sauce in slow cooker.
6. Cover and cook on LOW for 3 1/2 hours or until peppers are tender.
7. Stir in cornstarch mixture, sesame oil, and green onions. Cook 30 to 45 minutes or until liquid has thickened.
8. Ladle into soup bowls; scoop 1/2 cup rice into each bowl, if desired.

Makes 6 servings.

There are a lot of Chinese cooking that involves slow cooker which is why most Chinese family has a slow cooker. You can usually get a good recipe book from the Asian market and also the spice that you need for the cooking. :)
 
I dont have one but I really want one :)

I have always enjoyed my moms beef stew she makes in hers.
 
I don't have any myself, but I do want to say those pre-made ones in the frozen part of grocery stores are just awful. I cooked a beef stroganoff one for about 8 hours, and it was one of the most disgusting things I've EVER tasted. I didn't think anything could be screwed up in a crockpot, but lo and behold..
 
What do you mean frozen ones? Isnt the crock pot the thing where you put all your veggies. meats. etc and let them cook all day with seasonings?
 
yep, the ones i'm talking about come all together a bag, like chicken and dumplings for example comes with dumplings, chicken that is cut up, and sauce and veggies. none of them are precooked though. you just put em all in and let it cook.

but they suck so it doesn't really matter :D
 
i just picked up a slow cooker recipe booklet in the checkout line the other day. I'm cooking cranberry-apricot pork roast this weekend. I'll let you know how it goes.

i've got a good one that's just simply called "italian chicken". however this recipe is at home and i will edit this or post another entry later today. :)

those frozen ones randycaver's referring to are from "banquet", if that's the one i'm thinking of. and yes, they suck. i bought 2 originally and the first was so bad that the other has been in the freezer for several, several months.

There is just really so many...

Any soup or sauce can be put in there and in the recipe thread i have one of my most useful of them for vegetarian chilli which can be used so many ways:

You can also make kraut and sausages or hotdogs (veggie sausages work well too)...add a little beer cook on low. And you can slow roast a turkey breast. Buy a boneless breast thawed , rub with herbs and olive oil and put in slow cooker and cook on slow for about six to eight hours. add a little chicken broth..Maybe a half a cup to a cup, your choice. Later after it is cooked you can throw in your mashed potatoes and stuffing and pour gravy over the whole lot of it and let it cook for another hour or so.

Here are a few of my most favorites:
I would make this before we would go to the beach all day and when we would come home it would be good and ready.Ground meat subsitute works too.

BBQ Turkey Sloppy Joe (makes a lot !)

2lbs ground turkey (i use breast)
2 medium onions (optional for me !)
2 (15oz) cans tomato sauce
1 six ounce can of tomato paste.
1/2 cup packed brown sugar
1/3 cup of red wine vinegar or apple cider vinegar
2 Tbs Worcestershire
2 Tbs liquid smoke hickory flavor
1/2 tps seasoned salt
1/4 teaspoon of fresh ground pepper, or so
Buns

1. In large skillet cook turkey and onions till browned lightly and crumbly (about 6-8 minutes)...drain fat

2 transfer turkey into slowcooker and add ingredients while stirring one at a time.

3. cover and cook 5-6 hours

Serve on buns with cheese too if you like with salad and corn on the cob for a quick yummy meal.


Or another one that is easy and yummy is mexican dishes. Cook up your desired mexian flavored chicken, beef, or beans (i just add chilli seasonings and cilantro and garlic and stuff but you could just buy a pack of seasonings)and then layer in the dish the bean or meat base then cheese, then corn tortillas uncooked (layer like lasagne), then some rice and maybe beans, be creative ! more cheese, more corn torillas, then top with black olives and maybe some green chillis too and pour some enchilada sauce over it all and more cheese then cook on low for a few hours.Then top with green onions and serve with sour cream and some fried tortillas (or tortilla corn chips)...serve with green salad and key lime pie for dessert.

Or maybe you are feeling slow cooker gourmet ?

Saucy apricot glazed chicken
1 cup good quality chunky apricot preserves
3/4 cups bottled Russian dressing
1 envelope of dry onion soup mix
about 2-3 lbs of chicken breast trimmed of all fat

In medium bowl, mix together the apricot preserves, dressing and dry soup mix until well blended.
Arrange chicken breast on bottom of cooker and spread mix across top. You can layer the chicken if you need to just put sauce between the layers. Save a little of the sauce aside for later.

Cover and cook on high for one hour and then reduce setting to low and cook for about three more hours. serve over rice with remaining sauce.


Cobbler is also really simple. I will post more later...

That's awesome. That's like the laziest shit I've ever heard. That's like people buying the peanut butter and jelly that comes together in one jar so they don't have to spread them on separately.

For a crock pot, all you have to do is buy a bunch of stuff, cut it up, and throw it in there.

I'm buying a Crockpot tomorrow, I have a special dinner I want to make this weekend and I wanted a lil splurge from my check :)

Here is what I will be making most likely:

Easy crockpot chicken recipe made with chicken breasts, marmalade, and curry powder, along with other seasonings.

INGREDIENTS:

* 4 to 6 boneless, skinless chicken breasts
* 3/4 cup orange marmalade
* 1/4 cup water
* 1 teaspoon curry powder
* 1/8 teaspoon cayenne pepper
* salt and pepper, to taste

PREPARATION:
Combine all ingredients in the slow cooker. Cover and cook on low for 5 to 7 hours. Serve chicken breasts with juices over hot cooked rice. If desired, thicken juices with a tablespoon of cornstarch mixed with a small amount of water.

Can it GET any easier than that?!
 
I have an awesome crockpot cookbook. It's called fix it and forget it. It's a new york times #1 best seller, which is a great achievement for a cookbook. They don't get this that often. You wouldn't believe the stuff you can make in a crockpot!
 
my mom has been on a crock pot kick since i moved back home. its annoying because i'd say 2 out of every 3 dishes kinda sucks. and i feel bad telling my mom it sucks since she is cooking mostly for me...

i think i will pass her some of these recipes :)
