Recipe Requests: What to do w/ smoked-salmon?

I LOVE smoked salmon, but it's usually just a treat for me due to price. Recently my grocer's been stocking it at 9$/lbs, and I've been getting an lb every few days, but I'm getting bored w/ salmon/cream cheese bagels!

What do you guys do w/ smoked salmon? I've got a ton in my freezer, and am still buying it like it's going outta style (cuz...who the hell wants to wait a day for frozen salmon to unthaw?), but at this point I'm just eating it straight. I don't wanna play it out so I need variety, I know this is the right subby to ask this :D
 
never had it, will keep an eye out. I'm a dork when it comes to cooking, but fish, being so pricey, was the last area I got into and that wasn't too long ago. I've always gone to salmon and tuna, w/ smoked salmon being my favorite. I've got little experience though because I prefer smoked to steaks, and smoked is usually ~$7/qrtr.lbs, so it's always a 'treat' thing. But out of nowhere, my local place has had $9/lbs smkd salmon, and I've been going nuts (3lbs in the past week!)
Only problem is that the 'jewish' approach (cream cheese/bagel) is getting old fast, so I just started eating it raw as my late-night snack in bed, but that's just....too plain for my tastes.
/should probably just google.image search for ideas, but figured was worth asking here ;P
//where would one find smoked trout? I can't say I've ever even seen it offered, but then again I only shop at my 2 local, mega chain grocers; my area isn't the type that I had in MA where there were higher-end grocers in local vicinity, hell i haven't seen a trader joe's or whole foods since I got to FL several yrs ago :/
 
Make sushi.

Or do a google search I did this and I found lots of recipes with smoked salmon like scrambled eggs with smoked salmon, a quiche that has smoked salmon, arugula, and goat cheese, and a smoked salmon pizza with capers.
 
I only know a few alternatives from my experience.

Smoked salmon goes good with egg salad. You can spread some of the salad on a cracker or bruschetta and put the salmon on top. I've also done scrambled eggs with salmon but I put the salmon in too early and it got kind of burned.

I've put it on pizza instead of pepperoni. Smoked salmon that's baked in the oven with cheese is divine. You can even just order pizza and put it on top of that.

You can use it like a deli meat in sandwiches.
 
I have had salad with smoked salmon on it and ranch dressing and it was heavenly!
 
Oh Salmon has a spell on me. Its the one food keeping me full vego. I like it just on its own. I bought 200grams the other week just to have on a sandwich or whatever (treat for me too) and had a big weekend and was so hungry. Was just going to munch on a few slices to fill my body (have cut out at least 85% of the crap i used to eat so try and be health consious with food choices) I ended up eating the whole packet. It felt so good to eat and filled me up and i didnt feel like crap as if i would have had a cheeseburger etc but just eating it on its own was awesome cos you werent masking the flavour with other ingrediants. I always thought it was a "waste" and i should make something with it. Nup. Naked salmon for the win :-D

You could always whip up a benidict. You can buy hollandaise if you cant make it. Just poach some eggs, wilt baby spinach, put some sour dough in or whatever nice bread you will like. Or even make scrambled eggs and have them on the side instead of bacon

Salmon yum, could eat that all day ♥
 
I used to live on Ontario lake and my neighbor was sourced to build Salmon ladders on the river so the salmons could lay their eggs. Oswego NY has a big Salmon Fishing tourism industry.
I just ate a processed ( out of a can ) salmon burger. The can read 90cal per serving and there was 7 servings in a can. That seems like a lot of calories.
 
^out of the can SUCKED last time i tried it, and was ~$3.50 for a can!! WTF? It had tons of fat so cannot imagine why it tasted so much closer to tuna, than a salmon steak lol!

thnx for all the suggestions. after another 5lbs of smoked salmon (3/4 of which was to myself), I can say what my original intuition told me- smoked salmon is perfect by itself, w/o any need to dress it up

My favorite* is still bagel/cream cheese/salmon, if I'm going to have it w/ anything at all, but really I just prefer it by itself..
(*I tried the eggs approach, but not the pizza one. In the end I just find that, if it's smoked, it's legit enough on its own and that adding things is improper. My favorite 'mixed dish' so far has been putting smoked salmon on top of naked brown rice, which is awesome but even still, is best as 2 separate 'sides' for a meal and not 'on top'/mixed)
