If you are Canadian is it enough to present a passport that says you were born in Canada or does it have to actually be a Canadian passport? Will employers and customs agents accept British passports?
Don't I need a professional who lives in Canada to say they've known me for a number of years? What is involved in getting a birth certificate sent to the UK?

They will accept any valid passport from any sovereign state, but as with all things: context matters.
Having a Canadian passport would imply you're a Canadian citizen. Simply being born in Canada does not automatically give you citizenship unless your parents are Canadian or were covered under some diplomatic clause at your time of birth. Also, in Canada the federal government is aware of the existence of this glorious store of knowledge called the world wide web and actually publishes useful, current information on this most excellent of mediums. eg. http://www.cic.gc.ca/english/citizenship/proof.asp
