If you are Canadian is it enough to present a passport that says you were born in Canada or does it have to actually be a Canadian passport? Will employers and customs agents accept British passports?

Just apply for a copy of your birth certificate. You can enter with your passport and use your birth certificate to stay in the country

Don't I need a professional who lives in Canada to say they've known me for a number of years? What is involved in getting a birth certificate sent to the UK?
They will accept any valid passport from any sovereign state, but as with all things: context matters.
Having a Canadian passport would imply you're a Canadian citizen. Simply being born in Canada does not automatically give you citizenship unless your parents are Canadian or were covered under some diplomatic clause at your time of birth.
