Well, in most cases a drink don't alter the effects of a psychoactive substance, unless drink is psychoactive or inhibit certain enzymes in your body(check grapefruit juice and DXM combo for example). Also, a carbonated water can speed up absorption rate for some chemicals, but this interaction is usually not significant.
Speaking from my own experience, mixing a psychedelic in a water/tea/juice/soda/etc don't change much the character of the resulting trip.
