Just on the whole saturates/cholesterol in the diet issue... To sum up that longass article, dietary saturates and cholesterol aren't responsible for heart disease and in fact they're just darn great things to have in quantity in the diet of anybody who wants to be healthy. To quote the article:

"and finally, use as much good quality butter as you like, with the happy assurance that it is a wholesome - indeed, an essential - food for you and the whole family."

And here I was spreading olive oil on my toast thinking "It's okay man, it tastes like shit but at least you can never die"...

The article does make a lot of sense, though. After all, saturate heavy natural foods are, well, natural and we've eaten them for thousands upon thousands of years without being disease riddled mutants (well.. excessively disease riddled mutants) whereas today we munch on such deliciousnesses as "I Can't Believe It's Not Butter!", "light" olive oil and "I Can't Believe It's Not Mayonnaise!". Okok I made that last one up but you get my point. Now excuse me while I go drink a pint of cream. Go read the article.

I agree with Mercola often. Saturated fats aren't all that bad. In fact they're good in moderation like everything else.

Check out coconut oil. The best of the saturated fats. Almost never goes rancid. Stimulates thyroid function (weight loss and energy) Is loaded with caprylic acid (kills candida yeast). Best for high temp cooking. And tastes good.

ha finally some people are starting to believe the truth. this does not by any means consume all the butter you like, in moderation it is fine, not in heaping quantities. i think the egg myth is the worst, avoiding eggs cuz they have cholesterol is silly. an egg a day is ok, or a few times a week. genetics affect cholesterol more and fiber helps to recycle cholesterol in your blood (theres your daily nutrition factoid).

mm coconut oil...also a moderation thing, it was funny a few years ago when people were drinking it for the medium chain triglycerides. gross and unhealthy. cooking with it and adding to food= good. drinking coconut oil= not so good.

it annoys me when these huge fads take off and people beleive them and get shocked when they find out its not healthy (ie atkins and carbs, the egg thing, now lotsa people are getting away from dairy). its common knowledge a lot of it, not scientific breakthroughs.
but hey, soon i will have my degree and people will pay me lots of money to learn food things. yay.

Firstly, this is patently false, and their dangers are backed up by decade of not only medical but biochemical science. However, the danger is in quantity, not in simple consumption as most people would like to have you believe.

As the member of a family that has a life-threatening lipid level disease that is hugely exacerbated by cholesterol, I urge you not to post such rash statements.

So you do know how complex this is then? ;) Just wondering why you would ask.

I've always been disgusted by pure butter and margarin (no idea why), but the thought of eating pure fat just makes my stomach turn.

I know there are direct reasons as to why cholesterol is deleterious but I can't remember much from biochem I/II.

Dont they clog your arteries?
High density lipoproteins remove cholesterol from your arteries and take them into the liver for removal. Low density lipoproteins take cholesterol from cells that are producing an excess amount and chuck it on to your arteries.

Yes. We have extra virgin coconut oil at home at all times. Its still a better alternative to vegetable oils and such, but like we all know, everything in moderation is the best thing to do.

Thanks for the website. Quotes from Raymond Peat are uncommon. I think he has some interesting although controversial opinions. He is a pure research scientist an worth reading. That is if you can understand him. =D His books are well worth reading. Especially Mind and Tissue

Yes glad you liked it. If you take time to look around the site, it is full of information and articles from various medical researchers/journals as well, such as this article from the Journal of Nutrition (esp for the original poster):

Consumption of a Solid Fat Rich in Lauric Acid Results in a More Favorable Serum Lipid Profile in Healthy Men and Women than Consumption of a Solid Fat Rich in trans-Fatty Acids
Nicole M. de Roos*2, Evert G. Schouten* and Martijn B. Katan*,{dagger}

Also here are the fat & cholesterol links from the website that are well worth a read :

Research on Unsaturated Fats

Research on Cholesterol

Another commercially motivated source with an agenda. And their web pages don't even render properly in my firefox browser. No thank you.

Well I and my friends happened to find the articles useful , I didnt even think of the website as having some sort of propaganda in mind and I read the individual articles and I happened to LEARN SOMETHING FROM IT. If you're so quick to dismiss something as a bunch of nonsense without even having read it thats not my problem anymore. Sheesh. :\
