I can eat pretty simple, I love oatmeal with some whole milk but you said you don't like oatmeal. Another good thing to eat is bananas cut in slices topped with peanut butter. Honestly I fucking love peanut butter I could put it on anything but with bananas it is delicious (if your feeling ballsy put some brown sugar on top of the pb).

hmmm another idea for protein is the italian meat roll. There are variations in the recipe involving garlic/eggs/pepper/bread . But the main thing is to get around 2lbs of some ground beef spread it out then put ham slices/cheese/pasta sauce and roll that bitch up and pack it in, put it in the oven and its almost spaghetti tasting without the noodles of course(I guess you could put noodles in there).

I don't know if you are into prepackaged noodles, but indomie noodles are so damn good, 100x better than ramen imo. My favorite flavor is the mi goreng kind of like an onion/garlic flavor they throw in all types of seasoning packets that you can put in. The grocery store I go to has a "foreign foods" aisle and they have a bunch of different ones.

Good ole chicken and bbq sauce with beans/rice is heaven to me. If you like fish, get some tilapia fish packets and put some lemon juice on there/ real good with rice as well.

Or get a dehydrator and make some beef jerky. It's real cheap, I've done it a few times but I can't get the chewiness right, there are a shit ton of flavors you can marinate your beef with too.

Greek yogurt with cinnamon mixed in is what I am enjoying right now.

-Egg whites and diced potatoes...the list goes on.
