My salad deliciousness

Mmmmmmmm. Sounds delish. I do a similar one, but with a squirt of lemon juice and sometimes some chickpeas as well. I hearts it.

Oh yum! Soungs good........
Reminds me-
I want to try to make my own hummus and falafals. (sp?)
Do you have any tried and true recipes?
My father in law has one I may try.......for hummus.

I make killer hummus and have recently had mixed success with falafel. The key for the latter is to not wuss out and make sure that you at least shallow fry them. It triples the fat content, but it makes all the difference in the world.

Here is the recipe that I used as a basis for my falafel. It says not to cook the soaked chickpeas, to which I say wat? Cook 'em, maybe not until they're moosh, but soaking is not enough. I usually go a bit easy on the cilantro too, and have tried subbing in a bit of fresh mint with good success.Oh, and a bit more salt and cumin help heaps.

My hummus recipe isn't a recipe. It's based loosely off an old recipe by James Barber from when I was in my 'teens, and has mutated greatly over the years. Protip: if you want the lovely creamy texture but with a bit less fat and don't care if it's not vegan, sub part of the olive oil in recipe for some good yogurt (3.5% is fine, I wouldn't go much lower than 2% though). No more than half. It gives a bit of a tang, which is nice too; lately I've been adding lots of lemon juice and zest to my hummus with good results.

If I'm still feeling motivated after my nap I'll post the recipe ;) It may also be somewhere in the SO recipe thread too IIRC.
