If i ate almost 2 grams (Dried) of crazy shrooms yesterday and tomorrow i wanted to trip as hard or harder would 5 grams (Dried) do the trick?

That would without a doubt do the trick. Though I would suggest starting with a lower dose. At most I would start with 3.5 grams, if that doesn't get you where you wanna be, you can always eat a lil more.

From everyone I heard they say a week break is best with mushrooms. With mushrooms I always wait a week before triping again.

With mushrooms you can and will build a tolerance. I would suggest waiting a week before doing them again, but the fact that youre almost doubling your dose will still give you the effects of a good mushroom trip, it jus may not be nearly as strong as it potentially could be in, say, 3-5 days.

Mushrooms will work two days in a row, LSD is the one that really suffers on the second day.

3.5g will not be strong after dosing 2.5g the previous day.

Read the OP. The first dose was not 2.5 grams, it was less then 2 grams. And they are dosing 2 days later, not 1.

3.5 would be close to doubling the first dose. Doubling the dose 2 days after the first trip would be a good and safe place to start, why risk over-doing it?(not like you can't just eat another gram or so in an hour) With the dose doubled you should be close to, or at how your first trip had you feelin.

That's really not long enough.

LSD suffers the most from that short term tolerance. Tryptamines suffer less than LSD, but still pretty badly. Phenethylamines seem to be considerably better (ie, less reduction in effect when taken several times in rapid succession).
