Well I think that depends on your strain of mushroom. Psilocybin won't break down anywhere near as fast as psilocin. I have brought the water to over 60 C and it had no noticeable effect on potency. However I have only ever used p.semilanceata which have a very low amount of psilocin compared to psilocybin. I think it's fine as long as you don't expose it to the heat for too long. It doesn't really need to take that long, one heating with the odd stir for about 15 minutes and then re-heat one more time so that the water is warm enough to drink tea with.
