I can't get enough of Paco de Lucia. An excellent example of flamenco guitar at it's finest, this is the real deal.

While you're at it, Andres Segovia, who was not studio-flawlessed out like today's musicians.

I noticed the soundtrack the very first time I saw 8mm back in 1999. Mychael Danna is a very talented and original composer...the music in the movie is dark, erotic & mesmerizing.
From Amazon:
Danna conjours up something both beautiful and haunting with restrained strings next to an undercurrent of morrocan beats. It climaxes in a fury of tribal rhythms and the timeless orchestral arrangement made me weep. Buy it.

I would also suggest much of Brian Eno's work, although he does occasionally sing. I would suggest any of the tortoise albums I didn't list, TNT just happens to maybe the best place to start with them.

I should also mention Sigur Ros. While not truely instrumental, the singer sings in his own made up language, which comes across more as an instrument since I don;t have a clue what he is saying and also because he sings that way.
