Bought it from the fishmongers down the road, I'm in Scotland so good seafood here.

Not doing anything fancy at all, will just boil it and then toss it in some butter emulsion with a squeeze of lemon and some parsley. No need to fuck about with it when you got super fresh lobster (although lobster curry and stuff can be very nice too). Just eat it with some pea risotto and some roasted grelot onions I think.

I didn't know you were in Scotland - for some reason I thought of you as a Londoner. We're lucky here to be able to get such fresh shellfish.

Your sides with the lobster sound lovely. I get the impression you cook professionally? It would be interesting to get your take on salt / seasoning lol...
 
I'm from Surrey, lived in London for five years, live in Bristol, and visiting Scotland...so you were half right! Didn't notice you were in Scotland too, where you at? Yeah you are lucky with the seafood here, would kill to have a fishmonger like the one here where I live. Can get decent seafood but choice is limited unless you pre-order.

I used to cook professionally yeah, not any more though (although will be looking for some part-time work once I've sorted myself out if I can find the right place). My take on salt is that I'm totally addicted to it and generally have to go a little bit short of what tastes right for my palate if I'm to make it right for most people=D. Most people who have cooked professionally in somewhere decent end up the same because you're eating/tasting food seasoned 'correctly' all the time which is much saltier than food generally is.

Thanks for that, I've always wondered about the salt thing. If I'm cooking to impress it always needs more seasoning but everyday food for nutrition not. And that's most days...the difference is notable.
I grew up in a cooking household, my grandma and mother were cooks. Salt is a no-no up here as it causes so many health issues.

We're on the Clyde here, near the Isle of Arran - where all the good fresh stuff comes from. Alas we don't have fish here, its been over fished but we do have one of Scotland's first Marine Protected Area. I'm quite proud about that as I was part of it %)

I hope you can pick your cooking back up again as a profession - from what I read here you seem to know what you're doing in the kitchen <3
 
I thought loads of salt in your diet was alright for you again now? Wasn't there some science that proved it?

I get off lightly by not having a colon, I need extra salt as fluids go right through me and can strip out electrolytes. Salty food ftw!
 
You need a certain amount. The reason humans find it so nice is because before we worked out how to obtain it from the sea it was extremely hard to get in your diet from everyday items and therefore you're driven to consume plenty when you can get it, evolutionary thing. Too much is bad for your heart though.

I eat way too much, but I don't give a shit really. I'll take the early heart attack if that's what it means to eat food that tastes nice.

You're right I'll probably change my thinking when I get older and have kids and shit and me staying alive is actually important for other people but for now I'll be caning it. In the grand scheme of lifestyle changes I need to make eating less salt is not top of the priorities.

...and there's never a bad time for ramen.%)
 
The entire content of the fridge by the looks of things :D

We both enjoy Indian or Spicy foods so..

Starter
Squash and Chana Dal (chickpear) soup - It's going to be spicy with just a touch of curry flavor

Main
Turkey which has a black pepper, garlic and chili coating and stuffed with Lemon, chili, garlic and bay

Sides of roast veggies (squash, onion, courgette, potatos, carrot) and mash

Also made a spicy tomato 'gravy' to go with it.

Smells lovely,

That sounds lovely Mr Bear - really quite an alternative mix of culinary cultures you have there.

I did duck today - finished with a cranberry, soya, ginger and honey glaze. It worked out fine, really crispy skin and moist meat. The usuals' accompaniments - lemon and tyme stuffing and herby chipolatas made into pigs with Ayrshire bacon as blankets etc. My roast tatties (made with duck fat) went down well, I did extras and the gannets have scoffed the lot 8)

There's xmas pudding or chocolate fudge cake for afters - so far half of them are snoring on the sofa or comatose, so its not been served yet.

As usual I have been gifted too many nice chocs and have scoffed plenty :!

Man, i hope karma isnt real, otherwise ill be eaten by pigs for the next ten lifetimes....
These days its been all about food. And booze. Thats basically it.
