Tumeric, fried onions and garlic would be the things that would come to mind with the rest of those ingredients. Sounds nice, have to try something similar next time I make curry.
 
Nah, I think it's Amchur and just salt - no onions. It's worth a go.

Liking the sound of them with some pork - will try frying them with some lardons and garlic next time.

I decided to forego Sunday dinner at the folks place today because the football was on tonight.

Did a 'cheat' Sunday roast using a chicken thigh/drumstick but important part here is I decided to try roast potatoes instead of sautéed which I normally do. Turned out pretty damn well considering I used olive oil & new potatoes. I think with some goose fat & a better variety of potatoes, they would have been perfect:



Time to tuck into a Mr. Kipling's Chocolate Sponge Pudding. :)

I had a full roast dinner (beef) that wasn't cooked by me for once. Pudding coming soon i think but don't know what it is, I like surprises. Will make salmon fishcakes tomorrow i think as my ocado order is arriving in the morning. Getting my favourite wine as well, can only get it on ocado so it's always something to look forward to.
 
I hate surprises! I'm always asking my Mum what's for dinner when I am home. :D

What kind of wine is it? I'm very partial to a Rioja.

Had a lasagne, the bastard took an hour but it was worth it and a crunchie ice lolly.

I'm usually the one cooking (always...) so a surprise is nice once in a while. Seeing as there's literally nothing I don't eat i never need to worry.

It's a shiraz called widow hen, only £10 so not bad.
 
Homemade Spinach and Ricotta Lasagna or Cannelloni is amazing.

Time consuming but well worth the effort.
 
This thread always makes me remember how much I like cooking. I have wondered sometimes if I should have pursued a career in it instead of going to uni but it's so much less well paid than what I would otherwise be doing that it never seemed like a good idea. I couldn't live on not a lot, I mean how would I afford coke for one thing

Er yes back on topic and to break the suspense you've all no doubt been feeling, my pudding was jammy sponge thing. Very nice it was too and now I am (possibly obviously) consuming cocaine. But not eating it so I'm not sure it counts.
 
I had my usual calamari salad with Thai dressing for lunch <3.

Spudgun - if you mixed your ingredients with something like Gram flour they would make some great fritters. Make onion fritters with similar ingredients quite often - love the smell of curry leaves when they hit the oil. (especially if your using mustard oil).
 
bearlove, is there anything you DONT have in your pantry? i mean, mustard oil... i dont even remember seeing it in shops round here...

That sounds great - there's a place round the corner that does spring onion pakoras, but reckon green beans in the mix would be even better. I've not gone into deep frying spicy stuff since 'the samosa incident'. Might be time to get back on that horse :D

If you mix a few tbl spoons of oil into the mix then you can get away with making them in a non stick frying pan small amount of oil - yeah the texture is different but saves messing about with deep frying. Tend to only deep fry things when I'm doing crispy fish / chicken / tempura

Never had 6kgs of watermelon in there :D - I thought with spudgun mentioning a curry leaves etc he may be using it. It's used quite a bit in Indian dishes, it has a strong taste so I usually mix with vegetable oil. (I do have a lot stuff though :D)
 
I'm all for deep frying stuff when I can (just to get some use out of that particular gadget), but not braved mustard oil for deep frying. You don't want it interfering with yer chips when the fryer's next out :D

Never used mustard oil for deep frying, I only ever use it for making curries. I normally use mustard seeds to flavor the oil before a curry anyway so using the oil just add a deeper flavor. You should be able to get a bottle fairly easily from any Indian store.
