does tolerance raise / lower (depending whether you're increasing or lowering dose) faster or slower when you're asleep / unconscious? for opiates in particular, or perhaps for any drug?

it's relevant because 75% of the time i'm on opies i'm asleep ;) i really need to stay away from laying down

I come bearing no citations, but, I would have to say it really does not matter whether one is in a waking or sleep state; tolerance is going to raise/drop at the same relative speed.

Might I also add that while asleep, you may not notice so much that you are not totally opiated out of your mind as you wish to be - take only enough so that you are not sick, and can sleep, and do not waste you sleeping hours on raising your tolerance unnecessarily. :)
