For personal reasons, that would take too long to explain, I need to induce a severe tachycardia. I can get my heart-rate up to about 160bpm with insulin, but I need it in the 180-200 range and was going to use caffeine for this (or ideally, ONLY use caffeine and add the insulin if I HAVE to). Would just a LOT of caffeine work for this or does it have a ceiling dose where this would either be impossible, or require a ridiculous amount of it?

Taking large amounts of caffeine will be toxic in other ways and may still not get your heart rate up to 180-200. Just do very vigorous exercise if you want to get your heart rate up that high, there's no safe way to do it with caffeine.
