For the sandwich method. I've heard alot about parsley but no one seems to mention the taste of the smoke. They mainly just mention that it's safe and non-active.

Does anyone have some pleasant herbs they like to add to their spice? Or, better yet, a nice medley?

damiana
peppermint
lavender
mullein
blue lotus
b.caapi leaves (or better..a 10x extract :D )

Damiana is not non-active, it is certainly mild but not inert. It gives me a really warm feeling and everything seems to look more orange and full of light though this effect is most subtle unless combined with cannabis.
Mullein sounds like a very good one because IIRC it is a bronchodilator, so it allows you to let your lungs absorb DMT more effectively.

B. Caapi is of course also active - in combination you'd get one form of changa, of which many different forms are possible.

Blue Lotus is quite nice, and commonly used for this but it might be mildly active when smoked.

When I first read your post, I thought you were talking about infusing an edible herb with DMT and eating it on a sandwich. Lulz.

Peppermint is nice if you like the minty flavor. I agree with Solipsis, mullein is also a great choice.
