I can see the problem. Maybe also tell them how many years you've been doing it before they try and lord it over you?
You sound like someone who likes to work to a high standard and takes the time and care to do things properly. Those qualities will get you a long way in life. They'll also get a whole load of jealous lazy-ass losers who'd like to see you fail because they can't celebrate someone else's strengths and can't be bothered to really apply themselves to what they do. Either way, your work and integrity will always speak for itself, and people who care about their profit line will want you on board.
Regarding cash in hand, at uni I did a load of cash in hand jobs, it was quite easy given that I studied sports massage, physio, rehab etc, which is all usually cash in hand. Most students who are enterprising try something like that to make ends meet. Nowadays in the UK you have to be earning quite a bit before you get hit with any taxes, so it's probably not necessary, but at the time it meant I left uni with a profit and minimal loans.
