Summer foods and recipes

What do you like and what can you make?

I want some super dooper stuff to try out this summer so give me your best and brightest.


Also any special restaurants I need to try in the Sydney area.
 
Vodka infused watermelon.

1 bottle vodka
1 syringe
1 massive watermelon
1 fridge

Awesome. I'm going to share my never-fails, always yummy sangria recipe. This is a great, refreshing, intoxicating beverage:

1+1/2 tablespoons caster (superfine) sugar
1 tablespoon lemon juice
1 tablespoon fresh orange juice
750 ml bottle (standard bottle) of red wine (preferably Spanish)
500ml (2 cups) of lemonade
2 tablespoons gin
2 tablespoons vodka
1 lemon
1 orange
1 lime
ice cubes, to fill jug

Put the caster sugar, lemon juice and orange juice in a large jug and stir until the sugar has dissolved. Add the red wine, lemonade, gin and vodka.
Cut the lemon, orange and lime into halves, remove the seeds and slice all the fruit thinly. Add the slices to the jug and fill with ice. Stir well, and enjoy!

This is a great idea..........ummm, any tips on how to do it? Never heard of such a thing.


I was told in ED the other day that you can freeze grapes......I wonder how they would go with a little alcomohol added to them as well.
 
Might be too fiddly to inject. Easier just to add them frozen to a glass of vodka, kind of like ice cubes. You can also inject oranges with vodka. Or pour Bacardi into a whole coconut.

Summer fruits like peaches, nectarines or mango added to rockets salad with BBQ sea scallops and a light vinagerette dressing. *drool*
 
A couple of times already this year I have sliced up a mango with watermelon, strawberry, grapes and apple. Nice stuff.

Other than that Prawns (or any shellfish) with a crisp cold Pilsner beer is a no fail winner in any language.
 
This isn't a recipe, but it's so quintessentially summer I wanted to post it.

Eat a mango in the surf, or in a creek. The same can be applied to eating watermelon :)

As for summer recipes, I will agree with Busty about adding summer fruits to a salad. I tend to add orange to salads anyway (my mum has done it for years), but summer fruit is lovely and adds a whole new dimension to it.

I also love a simple piece of marinated meat (lamb/chicken) on the bbq, with a salad. :)

My mum makes a lovely summer fruit salad - bananas and papaya and a freshly squeezed orange juice. Leave it in the fridge for a while and serve it with ice-cream.

You can also 'freeze' bananas. They don't actually freeze completely and when peeled and eaten, have an almost ice-cream texture. SO good!
 
If you're gonna freeze bananas, you need to put chocolate on them first!
 
BBQ banana is the shiz too.

Also - fresh calamari marinated in lemon, lime, garlic and pepper for a few hours then cooked on the BBQ.
 
While we're on the summer fruit theme, you can make a tasty salad with cubed watermelon, a little feta, generous amount of lime juice, heaps of roughly chopped mint and a tiny bit of olive oil. :)

I like freezeing fruit and making daquiris too; mango, strawberries, banana, watermelon, it's all fair game >:-D

My fav summer recipe is for a salad the boy and I created - lettuce, chicken, mango, avocado, mac nuts, mandarin and asian crispy noodles. Lately I have been putting pear into all my salads too.
 
Lebanese Tabouleh

3 cups of finely chopped flat leaf parsley
1/2 cup of finely chopped mint
4 or 5 finely chopped spring onions ( with the green parts )
4 tomatoes medium size chopped into small cubes
100g of fine burghul
1/2 cup lemon juice
4 tbs olive oil
Salt and Pepper

Soak the burghul in cold water for 1/2 an hour then drain. Mix all the ingredients together, taste and adjust seasoning if needed. Serve with lettuce leaves .
 
My fave summer salad is:
-shredded smoked chicken (you can get them whole at good food stores),
-julienne snow peas, carrots, beans - blanched then stuck in cold water to stop them cooking
-cooked vermicelli noodles
-a light dressing of some mayo, vinegar, olive oil and seeded mustard

It's *fucking* good.

I do a similar salad which is Crispy dried noodle, chinese cabbage, pecans, shallot and diced onion splashed over with a cup of white wine vinegar with TB spoon of sugar and a dash of mirin.

Never thought about adding the fruit though, but I will now. Great Idea!
