This. The issue doesn't sound like a racial issue, just address the situation as you would with anyone else. It seems that over-thinking this and turning it into a racial issue when it really isn't is going to cause more problems than simply addressing it as it is.

I really don't see how race has anything to do with this - every kitchen I've ever worked in had a Hispanic majority. If the cook is under-performing and being a general nuisance to work with, I don't see why your manager wouldn't do something about it.
I'm racist, you're racist, and everybody who has posted on here is probably racist to some extent. But racism is bad, so nobody will admit it (even to themselves) because they don't want to be a racist asshole. And being in denial about it isn't going to help you see past it. That being said, forget about the cook's ethnicity, gender, and sexual orientation. Those things don't matter, and I don't see how thinking about those things will help you. Maybe a male mexican, yes I see your point. But a female hispanic lesbian women is virtually untouchable. Short of her stabbing someone there is not much you can do. Now I say this coming from the fact that I have only ever worked in a corporate environment. Private business might be a different ball game. While political correctness has its positive attributes it is very much a double edged sword.
I say bring her flowers.As you said, trying to win her over is a good idea. Try something like bringing in a box of doughnuts and sharing them with your shift-workers. If that fails, I don't know -- maybe you can sabotage her and get her fired, or you can change jobs. But your next job might have somebody just as difficult as she is.
I've worked in 8 different kitchens over the years with men, women, whites, blacks, Mexicans, ethnic Chinese, straights, gays, lesbians, Christians, Jews, douchebags, and saints - none of them were safe from being fired because of "who they are". If you don't pull your weight, you get the boot. The double-edged sword you speak of doesn't really apply.
