SHM, I saw a dog today that looked just like the one in your avatar and I had some weird moment where I thought it was you sat watching me faff with trolleys outside Lidl. Need to get out more.

So last night I made some hamburgers. I am normally militant about using one method but I was feeling depressed so I bowed to an alternative recipe and made them as follows:

1lb lean mince
Half a large onion chopped TINY
Paprika
Tiny amount of chilli powder
Small amount of coriander
Pepper
Salt

Now the things I wouldn't normally put in:

One egg
12 Cream Crackers smashed into powder


You know what? They were really nice. So I guess the moral of this story is that sometimes there are other ways of doing things which aren't the way you'd normally do them.

Do you think? I thought so... but it worked. Tasty, filling, meaty burgers. I would do it again although I'd use less crackers, I think they were excessively filling.
 
You're right, it isn't normally how I make burgers. I'm normally very anti egg in this context, I think it was necessary here because the crackery shit needed binding together more than actual proper honest meat does. I griddled them, that part was good.

How do you make burgers?
 
Why add cream crackers to them? That's an odd thing to want in your burger.
 
It is, but it works. I guess a lot of burgers have rusk in them, or breadcrumbs to bulk them out. Not always a good thing but it sort of did things for the texture in this case.
 
you add cream crackers to things like crab cakes, as they soak up excessive moisture from the crab meat.

With burgers, there's no excessive moisture to soak up, so they're unnecessary, unless you've added a fucking egg.
